给大家推荐一下sprouted bread. 这种面包不是拿面粉做的，而是把谷物发芽以后做成
面包的。 这种面包有什么好处呢？首先它是whole grain的，谷子里的所有营养物质都
在。其次谷物在发芽以后，能把种子里的营养转化成人体更能吸收的氨基酸。 所以对
身体很好。
这种面包要注意的是不能用高温烤，高温下里面的营养物质就会破坏。 所以一般要在
275F以下烤制。
这种面包因为营养太丰富了，所以很容易发霉。所以多见在冰柜里卖的。要吃的时候拿
出来，微波炉20-30秒就可以了。
可以在whole food, trader Joe,以及大部分的超市的冰柜里买到。 味道都很不错。

Artisan bread追求的就是这个劲道了。
一般来说想要形成大孔，需要gluten高的flour，就是bread flour，尽量减少fat和
sugar，甚至不加任何的fat和sugar，需要长时间发酵，一般的做法是用一个old dough
，在发酵过程中减少yeast量，拉长发酵时间。不少人是将dough放在fridge里过夜或者
过几夜，拿出来放置常温，就可以以一般方式整形进oven了。
东亚人（中日韩）大多不习惯gluten高的面食，更习惯像中国馒头一样的均匀细嫩的口
感。更接近于cake。美国的所谓sandwich bread就很接近这个口感，采用的法子是加多
fat和sugar，加鸡蛋。通常store－bought的sandwich bread里面采用的是大量添加
dough conditioner。你看日本店铺里卖的bread也好cake也好，外形均匀透彻，是因为
日本的食品化学发达，也就是添加剂加的恰当好处。
但一般来讲这些添加剂可能对身体有害，所以若是追求类似cake口感的做法一般是添加

Ezeliel bread (aka sprouted grain bread or flourless bread) is available at
Trader Joe's. They are made from sprouted (发芽) whole grains (wheat, barley
, lentil). Overall nutrition composition is comparable to whole wheat bread
with slightly less carb and more protein. They have a dense and coarse
texture close to pumpernickel. I just tried it recently. With a smear of
Nutella, it tastes pretty good.

WATER 43-46 Deg C， 1 and 1/4 cup +2 TBL
oil 1/4 cup
sugar 3TBL
salt 1 and 1/2 tsp
bread flour 4 cups
RED STAR QUICK RISE 4 tsp
家里没有QUICK RISE，就用的普通酵母，就是把混合液体到进去后，放置15分钟左右，
发一发，然后再放面粉。口味很像家乡小时候吃的坨坨馍。。。。呵呵
ITALIAN HERB BREAD
WATER 43-46 Deg C 1 and 1/2 cup +2 TBL
oil 6TBL

了下一本那就没完了。
讲故事不一定要看书讲，自己编个小故事也行，对两三岁的小孩根据白天的事情编了讲
讲就很好，而且可以关了灯讲。我以前给小孩编过小老鼠去county fair看摩天轮，小
老鼠开火车去看爷爷奶奶之类的，都是一讲讲好多天孩子还要听。
再看一个我看过的一本英文育儿书里的自编故事的例子：

我的饭菜经常是剩的，从冰箱拿出来的，然后就那么在室内放着，总觉得不够卫生。
我也想过放午餐袋，放冰袋，放走廊的架子上，大部分别的孩子也这样的，但是我娃还
没学会跟老师讲要热饭，他爸爸送时忘了这么做，娃中午的饭只碰了一点就都带回来了

其他孩子有人就带三明治和饼干，有人是保温盒。
我给娃买过一个桶装的保温盒，从里面掏东西着实费事。现在有点想买那个日本的两截
的保温盒，家里有俩大人的了，给娃买个小的，虽然贵点也咬牙了。
说是可以保温6小时，我想早晨把盒子用开水烫过，然后放了没动过的微波加热的冷菜

我也买了好几个小面包，然后人家跟我说只有loaf bread可以。。。
经常去那家买面包。现在有集点卡，买plain loaf bread可以盖一个章，集到9个送一
个免费的。
今天去买蛋糕，付了钱等店员包装。一个韩国女人买了1个plain bread，3个花式小面
包，我亲眼所见，店员给盖了4个章。我当初拿到stamp card的时候店员就强调说只有
plain bread才可以有盖章。因为赶着回去，也没有当场理论，去问清楚。回到office
想起这件事，觉得很不舒服，不是在乎有什么便宜可占，可是那么明显的歧视让人受不
了。去中国超市买菜也受气，金门肉铺的大叔脸拉的比驴脸长，上次老爸让我去买
半磅肉眼，说半磅不卖。check out的阿姨我和她说谢谢，眼睛都不抬一下。下次看到
一定问，不给解释，就再也不会去那家面包了，面包虽然好吃，可是没有骨气的事情不
