明的设计，将肠衣套上stuffer简直就是一秒钟的事。你要是坚持用可乐瓶子的话，这

考虑到有些吃货比较懒，我老就在这里再重复一下：四川香肠是需要有肥肉的，纯瘦肉
倒是健康，可是腊好后会太干，而且不香，建议肥瘦比例3：7。十斤肉要至少要三两牛
栏山五十六度二锅头（伏特加也行），三两半盐，三两糖，这是保证肠子不发霉的关键
，口味重可以多加，加的越多成功率越高，不多加其实也没事。麻辣的内容按自己口味
加，辣椒粉够细的话，肠子会红的通透。正宗的成都香肠就是这种配料。我老倒是也自
己加些别的调料，相当于升级/豪华版吧，但我成都同学说她有版权在里面，我要是
share给别人，就得给她交版税，所以我这里也就不公布了。
成都的肠子，我只在成都生活过，四川别的地方不太清楚，灌肠的是肉块而不是肉末，
所以并不需要绞肉机，刀切的够细，能够通过灌肠stuffer就行，两厘米见方的肉块就
可以了。
灌好后一定要在肠子上广泛扎眼通气，所有存气的泡更是要扎到。车库也是要通风透气
，版上一个筒子肠子发霉可能就是因为车库门没有留缝的原因。

与爱菊轩配方不同之处是肉切成长条而不是方块。
