大约是十几年前,市面上突然出现了一种新的烹饪油,英文叫做 Canola Oil 。起先只
有在专卖 ” 健康自然产品 ” 的店里才能看到,但是因为政府及私人公司都广为宣传
这种油的好处:纯植物提炼、不饱和性脂肪、低胆固醇、比别的植物油还理想 … 云云。

既然连政府都这么说,大概是不会错了;于是乎关心自己和家人健康的朋友,都纷纷买
回去做菜。它在北美洲的销路直线上升,没多久也引进了台湾。
但是, Canola 油 到底是什么东西做的呢?其他的油都可以从名字望文生义:如橄榄油
,当然是橄榄的油;花生油是花生仁的油;椰子油是椰子果实的油 … 等等。笔者心生疑
惑,查了极详备的东华大辞典,竟然没有这个字。
去年某日,笔者重听 雷博士在四、五年前演讲的录音带,赫然得到了答桉。正巧又有
一位琉璃光的朋友,转来一篇网上有关此油的文章,恰印证了 雷博士所言。
笔者知道有不少朋友还在用这种油,当即转发此文给一些能看英文的朋友。数天之后,
有一位本地朋友很急切的告诉我说: ” 好可怕啊!我们家这几年都用 Canola 油,那
篇文章里讲的症状我们一家四口全有!我已经马上换掉了! ”
英文 Canola 一字,是从 ”Canada Oil Low Acid” 四个字的首字母组合而成,意为
” 低酸加拿大油 ” 。
Canola 的前身是一种叫作芸苔 (Rape) 的植物,原生地是欧洲,俗称欧洲油菜,属十
字花科 (Mustard Family) 。
1970 年代,加拿大的科学家把芸苔作了基因改造,去掉里面的糖 (Glycosides ,会干
扰甲状腺功能 ) ,并减少其中所含的芥子酸 (Erucic Acid ,有毒 ) ,改良出了第一
代的 ” 低芥子酸芸苔子 ” (Low Erucic Acid Rapeseed ,简称 LEAR) 。
但荷兰有研究显示,这种油会伤害心脏。 这项基因改造工程持续未断,所以也一直未
有官方的长期追踪研究报告,但是由于这个新品种油菜容易种,长得快,虫害少 ( 虫
子退避三舍 ) ,收成多,很快就变成了加拿大的主要经济作物。
加拿大人说,这种基因改造的菜籽油有 ” 二低一高 ” 的优点 ; 芥子酸低、糖低、
好的油酸 (Oleic Acid) 高,又是不饱和脂肪,真是太理想的 ” 健康 ” 油了,不但
鼓励自己人民吃,也不忘推销到好邻居美国去。
1979 年,加拿大的食用油工业,决定为它改名为 ”Canola” ,正式摆脱了 ” 有毒
芸苔 ” 的阴影,并凸显加拿大之光。。。。。

其实不仅仅大中华, 老外的店里面也是一样的。建议去掉“大中华”三个字。
食品安全已经是全球性的问题。工业文明要改变人类了。
上个世纪60年代,关于这些类似的研究就已经在美国到处开花了。现在的问题是很多农
作物的推广,已经从科学研究 往 私人企业和食品供应商转移。所以对他们的监管已经
慢慢失控。Money talks.
小老百姓,多读书多看报多思考,避免被误导和愚弄,这样吃“奇怪"的食物的机会会
少一点。

What is Canola?
Today, canola oil is pressed from the seeds of the canola plant. Back in
the early 70s, canola was derived from a plant called rapeseed. Rapeseed
contains a hefty amount of erucic acid, which can be toxic in large amounts
– this is where all those rumors came from! While canola and rapeseed
plants are related (botanically speaking), they are very different. Canola
oil contains virtually no erucic acid.
The Nutrition Facts
Canola is a good choice for cooking and baking because it’s low in artery-
clogging saturated fat (lower than olive oil) and high in heart-healthy mono
- and polyunsaturated fats. Like other plant-based oils (like olive,
safflower, soybean and flaxseed) it’s high in vitamin E, cholesterol-free
and has about 120 calories and 14 grams of fat per tablespoon.

When to Use Canola Oil
Canola has a neutral flavor and a high smoke point, so it’s handy for stir
frying, roasting, grilling and pan-frying. It’s a good substitute for
vegetable oil when baking – just swap out equal parts. You can also use it
for marinades and salad dressings when you don’t want the flavor of olive
oil.
Bottom Line: The rumors that canola oil is toxic are just that – rumors.
There’s no reason not to add it to your healthy oil repertoire.

RAPE IN A DIFFERENT GUISE
Dear Editors
Recently I bought a cooking oil that's new to our supermarkets, Canola Oil.
I tried it because the label assured me it was lowest in "bad" fats. However
, when I had used half the bottle, I concluded that the label told me
surprisingly little else and I started to wonder: where does canola oil come
from? Olive oil comes from olives, peanut oil from peanuts, sunflower oil
from sunflowers; but what is a canola? There was nothing on the label to
enlighten me, which I thought odd. So, I did some investigating on the
Internet. There are plenty of official Canola sites lauding this new "wonder
" oil with all its low-fat health benefits. It takes a little longer to find
sites that tell the less palatable details.
Here are just a few facts everyone should know before buying anything
containing canola. Canola is not the name of a natural plant but a made-up
word, from the words "Canada" and "oil". Canola is a genetically engineered
plant developed in Canada from the Rapeseed Plant, which is part of the
mustard family of plants. According to AgriAlternatives, The Online
Innovation, and Technology Magazine for Farmers, "By nature, these rapeseed
oils, which have long been used to produce oils for industrial purposes, are
... toxic to humans and other animals". (This, by the way, is one of the
websites singing the praises of the new canola industry.)
Rapeseed oil is poisonous to living things and is an excellent insect
repellent. I have been using it (in very diluted form, as per instructions)
to kill the aphids on my roses for the last two years. It works very well;
it suffocates them. Ask for it at your nursery. Rape is an oil that is used
as a lubricant, fuel, soap and synthetic rubber base and as a illuminate for
color pages in magazines. It is an industrial oil. It is not a food. Rape
oil, it seems, causes emphysema, respiratory distress, anemia, constipation,
irritability, and blindness in animals and humans. Rape oil was widely used
in animal feeds in England and Europe between 1986 and 1991, when it was
thrown out. Remember the "Mad Cow disease" scare, when millions of cattle in
the UK were slaughtered in case of infecting humans? Cattle were being fed
on a mixture containing material from dead sheep, and sheep suffer from a
disease called "scrapie". It was thought this was how "Mad Cow" began and
started to infiltrate the human chain. What is interesting is that when rape
oil was removed from animal feed, 'scrapie' disappeared. We also haven't
seen any further reports of "Mad Cow" since rape oil was removed from the
feed. Perhaps not scientifically proven, but interesting all the same. US
and Canadian farmers grow genetically engineered rapeseed and manufacturers
use its oil (canola) in thousands of processed foods, with the blessings of
Canadian and US government watchdog agencies. The canola supporting websites
say that canola is safe to use. They admit it was developed from the
rapeseed, but insist that through genetic engineering it is no longer
rapeseed, but "canola" instead.
Except canola means "Canadian oil"; and the plant is still a rape plant,
albeit genetically modified. The new name provides perfect cover for
commercial interests wanting to make millions. Look at the ingredients list
on labels. Apparently peanut oil is being replaced with rape oil. You'll
find it in an alarming number of processed foods. There's more, but to
conclude: rape oil was the source of the chemical warfare agent mustard gas,
which was banned after blistering the lungs and skins of hundred of
thousands of soldiers and civilians during W.W.I. Recent French reports
indicate that it was again in use during the Gulf War.
Check products for ingredients. If the label says, "may contain the
following" and lists canola oil, you know it contains canola oil because it
is the cheapest oil and the Canadian government subsidizes it to industries
involved in food processing.
I don't know what you'll be cooking with tonight, but I'll be using olive
oil and old-fashioned butter, from a genetically unmodified cow.

Canola oil from the rape seed, referred to as the Canadian oil because
Canada is mainly responsible for it being marketed in the USA. The Canadian
government and industry paid our Federal Food and Drug Administration (FDA)
$50 million dollars to have canola oil placed on the (GRAS) List, "Generally
Recognized As Safe". Thus a new industry was created. Laws were enacted
affecting international trade, commerce, and traditional diets. Studies with
lab. animals were disastrous. Rats developed fatty degeneration of heart,
kidney, adrenals, and thyroid gland. When canola oil was withdrawn from
their diets, the deposits dissolved but scar tissue remained on all vital
organs. No studies on humans were made before money was spent to promote
Canola oil in the USA. Adrenoleukodystrophy (ALD) is a rare fatal
degenerative disease caused by a build up long-chain fatty acids (c22 to c28
) which destroys the myelin (protective sheath) of the nerves. Canola oil is
a very long chain fatty acid oil (c22). Those who will defend canola oil
say that the Chinese and Indians have used it for centuries with no effect,
however it was in an unrefined form (taken from FATS THAT HEAL AND FATS THAT
KILL by Udo Erasmus). My cholesterol level was 150. After a year using
Canola oil I tested 260. I switched back to pure olive oil and it has taken
5 years to get it down to 160. Thus began this project to find answers since
most Doctors will say that Canola oil is O.K.
My sister spilled Canola oil on a piece of fabric, after 5 pre-treatings and
harsh washings, the oil spot still showed. She stopped using Canola oil,
wondering what it did to our insides if it could not be removed from cloth
easily. Our Father bred birds, always checking labels to insure there was no
rape seed in their food. He said, "The birds will eat it, but they do not
live very long.". A friend, who worked for only 9 mo. as a quality control
taster at an apple-chip factory where Canola oil was used exclusively for
frying, developed numerous health problems. These included loose teeth & gum
disease; numb hands and feet; swollen arms and legs upon rising in the
morning; extreme joint pain especially in hands, cloudy vision, constipation
with stools like black marbles, hearing loss; skin tears from being bumped;
lack of energy; hair loss and heart pains. It has been five years since she
has worked there and still has some joint pain, gum disease, and numbness.
A fellow worker, about 30 years old, who ate very little product, had a
routine check up and found that his blood vessels were like those of an 80
year old man. Two employees fed the waste product to baby calves and their
hair fell out. After removing the fried apple chips from the diet their hair
grew back in.
My daughter and her girls were telling jokes. Stephanie hit her mom's arm
with the back of a butter knife in a gesture, "Oh mom" not hard enough to
hurt. My daughters arm split open like it was rotten. She called me to ask
what could have caused it. I said, "I'll bet anything that you are using
Canola oil". Sure enough, there was a big gallon jug in the pantry.
Rape seed oil is a penetrating oil, to be used in light industry, not for
human consumption. It contains a toxic substance. Even after the processing
to reduce the erucic acid content, it is still a penetrating oil. We have
found that it turns rancid very fast. Also it leaves a residual rancid odor
on clothing.

Canola oil is a health hazard to use as a cooking oil or salad oil. It is
not the healthy oil we thought it was. It is not fit for human consumption,
do not eat canola oil, it can hurt you. Polyunsaturated or not, this is a
bad oil.

The Facts About Canola Oil
Having pinned down the sources of most of this, let's move on to a good
representative sampling of the claims made within the text.
"Here are just a few facts everyone should know before buying anything
containing canola. Canola is not the name of a natural plant but a made-up
word, from the words 'Canada' and 'oil.' Canola is a genetically engineered
plant developed in Canada from the Rapeseed Plant, which is part of the
mustard family of plants. "
It is true that canola oil is made from the seeds of rapeseed plants, and
they do belong botanically to the mustard family, but not all rapeseed
plants grown for this purpose have been genetically engineered. In fact,
according to D'Arce McMillan's Market Watch article on the Western Producer
Website, currently only about half of them have been genetically altered,
for the purpose of rendering them resistant to applications of the herbicide
Roundup. The rest are plants that have been naturally hybridized through
traditional methods and no more to be very low in erucic acid because of
health concerns that have emerged in recent decades about the consumption of
saturated fats. As you can see at the Canola Council of Canada's site,
canola is the commercially available oil that contains the least of such
fats. Whole Foods Market is one source of non-GE canola oil in the U.S.

Oils will suffocate insects. This is no reason to conclude the oils are
poisonous.

The fact of the matter is that rapeseed meal, not the oil processed from it
first, has been used as animal fodder for a long time-and still is to this
day, even in England and Europe. Similarly, the facts behind what the
missive claims about the rise and fall of Mad Cow disease are not borne out
by science. There is no known link between canola oil and Bovine spongiform
encephalopathy.
"US and Canadian farmers grow genetically engineered rapeseed and
manufacturers use its oil (canola) in thousands of processed foods, with the
blessings of Canadian and US government watchdog agencies. The canola
supporting websites say that canola is safe to use. They admit it was
developed from the rapeseed, but insist that through genetic engineering it
is no longer rapeseed, but 'canola' instead."
That the agencies of two governments approve the use of it just might be
reason enough to celebrate canola oil. Other governments, including those of
Japan and Australia, also approve. I've seen no evidence of websites trying
to hide the fact that canola is made from processed rapeseed.
"... rape oil was the source of the chemical warfare agent mustard gas,
which was banned after blistering the lungs and skins of hundred of
thousands of soldiers and civilians during W.W.I."
This statement is patently absurd. Mustard gas was so named because of how
it smells, not because any plant in the mustard family was used in its
manufacture. It is stated in a similar debunking article by Dr. Carl
Albrecht on the CANSA Research site, as elsewhere, that mustard gas "or Bis(
2-chloroethyl)sulfide is made by treating ethylene with sulfur chloride or
dihydroxyethyl sulfide with HCl gas (Merck Index). These are highly
dangerous reactions and can only be done by experts."
Interestingly, later in this article Dr. Albrecht goes on to say, "After
analyzing the statements of John Thomas ... as well as consulting textbooks,
Medline, The Merck Index and other sources of information, I am satisfied
that this attack on Canola Oil is without substance and is a travesty of the
truth."
"Studies with lab animals were disastrous. Rats developed fatty degeneration
of heart, kidney, adrenals, and thyroid gland. When canola oil was
withdrawn from their diets, the deposits dissolved but scar tissue remained
on all vital organs."
This was a disastrous circumstance indeed. Why? Because the natural diet of
a rat is made up of grains, raw fruits and vegetables and is very low in
fatty acids. Introduce a load of heavier fats into a critter's diet and sure
all sorts of health problems might develop. Later studies demonstrated that
cooking oils other than canola (specifically, sunflower seed oil) produced
the same results in laboratory rats, as well as demonstrated that the
digestive system of a rat is rather different from that of a human.

oil (c22). Those who will defend canola oil say that the Chinese and

."
Now it is just inexcusable to misquote an author this way. The book referred
to was first published in 1986, and is still in print and available today
in a revised 1993 edition published by Alive Books. You can read more about
it at Udo Erasmus's Website. This passage from it is on page 117: "In fact,
erucic acid may have some beneficial effects. In recent years, a preparation
of 20% erucic and 80% oleic acids, called Lorenzo's Oil after the boy whose
condition inspired its development, has been used to treat a rare, fatal
degenerative genetic condition known as Adrenoleukodystrophy (ALD), in which
a buildup of very long-chain fatty acids (C22 to C28) destroys the white
matter (myelin) in the brain. Erucic acid helps to normalize the levels of
these fatty acids...." Gee, and canola oil also contains some erucic acid.
Earlier on the same page it says, "In China and India, millions use high
erucic acid mustard and rape seed oils (up to 40% or more erucic acid) as a
staple, apparently without developing the problems that rats and governments
have with these oils."
It must be understood that Mr. Erasmus is not recommending canola oil to
anyone, nor any other refined and processed cooking oil. In his book he
makes use of the scientific method of inquiry to evaluate all cooking oils.
His favored choice is unrefined virgin olive oil.
"Rape seed oil used for stir-frying in China found to emit cancer-causing
chemicals. (Rapeseed oil smoke causes lung cancer)"
According to the Newsletter of the Cooperative Extension of the University
of California, four different oils were tested in the study referred to:
unrefined Chinese rapeseed, refined US rapeseed (canola), Chinese soybean,
and Chinese peanut. The study revealed that cooking oils heated to a high
temperature release certain compounds, regular exposure to which may put one
at an increased risk of cancer. The unrefined rapeseed oil fared the worst
in this study, with canola coming in second, and with peanut oil rated as
the safest.

Hmm. Pretty much just as the rest of the email text, this bit here sounds
like nothing other than-an urban legend.
