缺点:
1.不比le creuset轻
2.锅的两个把手会非常非常烫,一不小心手就会被烫伤。
优点:
1.做出的红烧肉很好吃
2.煎鱼也不错。
我没有特别伺候它,洗完放炉子上烤干而已。买来的时间短,经验不够多。还买了它家
的饼铛,做出的饼非常好吃。

很FANCY的HEB, 路边可以看见GOLDEN WOK的招牌, 可是不知道为什么我在AUSTIN360上

装饰的很不错, 侧门边还有两个大兵马俑,有点PEIFU CHANG的感觉...整个餐馆觉得很
新,还有BAR, 很大,挺漂亮的,我们今天坐在大的落地玻璃窗旁边,墙上还挂着好几个液
晶电视,LG正好看FOOTBALL.我们都觉得即使东西好吃,吃饭的环境还是挺重要的, 今天
吃的身心愉快
那里东西的分量都不错, 味道也挺好的,我们连着点了两份凤爪,觉得比翠亨村好多了..
.餐具也挺干净,餐巾是浆得雪白的...东西也并不贵,我们两个人吃得很撑吃了26块钱,
居然比大部分时间在翠亨村吃的都要便宜...今天的两个WAITER都是可爱的ABC小TX...
那里有美国WAITER,也有很多亚洲面孔...

1. noodle king: 在New Hampshire Ave 和 Randolph Rd 交界处。这个可能不太被人
所知,但是离我们家比较近。广东菜式。我们点了韭菜花鸡丝和避风塘鱼片。味道都不
错,量也足,就是鱼片咸了一点但没什么大影响。饭后还免费送了紫薯西米露。老板娘
态度很好。
2. mama wok on Hungerford Dr: 就是颇受好评的龙泉小管。去了这家以后发现1明显
要差一大截了。我们点了苦瓜银鱼肉丝和xx鱼豆腐煲。饭前免费送了凉拌豆腐干,饭后
送了西瓜。菜的量都非常大,比1的还要大。味道也很好,尤其是那个豆腐煲。
我们在1,2点的菜都是11.95一个的,感觉2更实惠一点,口味也稍微好一点,但是1也
不错。总之我觉得港式/台式饭店要比川菜馆好。川菜除了又咸又辣就吃不出别的味道
了,而港台菜有很subtle的味道。 |

Chinese cooking, especially stir-fry, since the round bottom of traditional

但是绝对是正宗的American pad thai!!!
干pad thai粉 温水泡上
蒜切碎,葱切段
胡萝卜切丝 绿豆芽洗净
鸡肉切丝
一个鸡蛋
鱼露 (我没有,就用 海鲜酱 蚝油 代替) 生抽 糖 辣椒酱
热油爆香蒜碎 煸炒鸡肉至变色
这时候粉应该已经半软了 控水放锅里煸炒至柔软又不失筋道的程度
(如果总是不够软 可以稍微加点水)
粉基本好了之后下面的动作就要快 以免粉煮过头
迅速按自己口味加入调料 拌匀 把粉拨到一边 放一个鸡蛋在锅里炒熟
然后放胡萝卜 豆芽 葱段
所有东西拌匀 出国
上面再撒一点花生碎就更好啦

,不论中餐还是其他国家的餐馆都可以评价一下
1. 必须是介绍自己亲身体会的经验
2. 包含餐馆详细信息(名字 地址 菜种类 停车信息等等)
3. 至少包括2-3个推荐菜(或者不推荐的..)

- Large 13" rim on the top, much narrow on bottom
Cons:
- Coating on the inside surface to protect from oxidation, rusting rubs off

本人毫无经验,原来家里都是在用target买的不粘锅,每隔一两年换一批。为了家人健
康,感恩节的时候买了Mauviel的12‘ pan和wok,今天拿出来用了。我就是按着新锅里
面的一个说明书的步骤开的锅,但是感觉screwed up了。今天只搞了那个pan,wok还没
开始。希望大家给指导一下:
先是去掉那层beeswax,还算顺利。我烧了一壶热水,然后把锅放在池子里,浇上热水
,之后挺多蜡都化了,然后流到水池子里了,大概里外都搞了2-3遍,一些地方用
sponge擦了擦,就基本干净了。
下一步按着那个说明是“cover the bottom of the pan with oil and heat for 5min
",我倒了大概2mm厚的soy oil,但是我手贱,四周摇了一下(是不是不应该这样?)
,锅的壁上也沾上了一些油,然后就开始烧了,然后又按着说明, repeat了一次刚才的
过程。最后出来的结果是下面这个样子(抱歉没搞明白mitbbs怎么上图,附件说不能大

炒锅的也有铸铁的。
现在是碳钢多。不过你说你家是碳钢的锅我不信。
除非是国内买的wok,国外碳钢锅基本上都要特别去买,
随便店里不是那么常见。国内的碳钢wok材料我不放心。
我有个朋友以前用油桶的铁皮做wok。看不出来,外观都一样。 |

冬天到了,本来打算买个电磁炉吃火锅,看了看大家推荐的牌子都挺贵的,而且不送锅
,还有人反映会有高频噪音之类,于是犹豫了。。。后来想起原来用过Wok,还真让我在
amazon上面买到了。
优点:和推荐的电磁炉比便宜很多。容量大,热得快,可调节温度。不粘锅,清洗起来
方便。不吃火锅的时候还可以当炒锅。
缺点:有点重,不过底座可以拆下来。乍一看锅有点浅,个人觉得没什么负面影响。接
线有点短,需要外加接线板。
买来之后已经让wok主持了两场10人左右的火锅party了,大家都挺满意的。所以贴上来
分享一下^_^

Iron is an element per se, and it is "inorganic" by definition, I guess.
The so called "organic iron" is basically some kind of "iron compound", that
is, iron "mixed" with something else, and that "something" may be organic.
And iron wok has used by Chinese for thousands of years (at least two
thousand years, if I remember correctly). And cleaning-heating-oil seasoning
method for iron cookware also has been existing for at least that long,

的东西吧。 全程DIY, 从版上收益很大, 希望也能多少回报点儿,0002大人审的。
第二步主要是两点, 第一个是sustained international acclaim, 还强调了sustain
的重要性, 我就做了3个google地图, 分别是所有在2010, 2011, 2012引用我的文

6. Hong Kong King Buffet (Super King Buffet)
推荐!去吃了Saturday Lunch, $9.95/person,热菜,点心和凉菜的种类挺多的,算是价有所值了。其中螃蟹和椒盐虾不错,有人提到Steam fish最棒,可能抢光了,因为Lunch3:00pm结束,我去的时候已经1:50pm了。总体来说做的是又入味又清淡,不像其他Buffet吃的时候咸得狂喝水,吃完之后又因为味精而狂喝水。
5. MAMA Wok
周末去了不少人都推荐的MAMA Wok,真得很不错,是正宗的中餐,比来来要正宗,麻辣牛筋是薄薄的透明的有筋道的,其他凉菜的味道也都不错,不像来来的麻辣牛筋是5毫米的甜甜的小块状厚片,MAMA Wok的其他热菜也都很不错,尤其现在有新鲜的笋片炒肉,喜欢吃新鲜笋的一定要尝试。终于在Richmond找到一家可以经常光顾的中餐馆了,我很欣慰呀,呵呵。也多谢楼下很多人的推荐。

16"生铁锅, 用了好几年了, 几乎不粘, 炒年糕,米粉,和面条,如不加很嘤偷?话就会粘, 我就用Swiss Diamond non-stick wok来炒.
一定要用gas 炉子,要火大, 小火炉子要用铸铁的, Le Creuset or Lodge wok 都很好.

Good wok
High quality salt and pepper, chili flake(if you like spicy food)
a piece of Butter melt in the wok (or you can use olive oil)
put meat in w/o seasoning
med/low heat, control the temperature with a thermometer.
depend on what you like, the temperature is different also.
flip over meat only once, put seasonings on the cooked side first, the other
side you can add later.
