你如果自己做，就不会去买costco的crab cake了。
自己做，成本低，产量高，而且最主要的货真价实。试试看吧！
材料：
1。crab meat 约1磅，（有新鲜的和罐装的，都行！claw meat 也可以的。）
2。eggs 大约5个。（根据自己的需要和crab meat 的量，加减鸡蛋的用量。）
3。葱花/新鲜韭菜 若干。（春天的时候，我喜欢用自己家种的韭菜，切小段；没有韭
菜，就用葱取代。）
4。盐1tsp.
做法：非常简单：
1，鸡蛋用筷子打散；
2，加入螃蟹肉和葱花/韭菜段，用筷子轻轻拌匀，不要太猛，防止把螃蟹肉绞烂。
3，不粘锅少许油，加热，用一个大勺子，舀一勺蟹肉糊，中火煎到两面金黄。（煎好
一面，再轻轻翻动，煎另外一面。）
注意：
做好了第一个，品尝一下，如果太淡，可在螃蟹湖中在加点盐，或者在煎好的crab
cake 表面撒一点盐。

flap. Sometimes this long thin flaps of meat wraps around the rib bone 3 to
4 times.
"LA Gar bi", are Beef short ribs. About 3 inches tall, 6 to 7 inches long
and 1/4 to 1/3 inches thick. The Marination is same, however the cutting and

is the first 13 rib bones and meat taken from the pig's back. Part of the
meat is from the loin so it is very meaty. If the pig is young it is also
called baby back rib.
spare rib
is taken from the belly therefore the meat is less and the bones are not
aligned as nicely. We chinese usually cut it into small pieces. It's cheaper.

发帖数: 1485 | 46 没有听说过用盐水蒸，应该是用盐水煮。缅因的海水煮龙虾是用的海水，但是直接加盐
也差不多。老美喜欢用柠檬和butter，中国人还是喜欢香醋+姜末蘸着吃吧

I bought Boston Butt and casing from the Meat House (close to Trader Joe)
They can dice cut the meat for you.
But still, I had to spend a lot of time cut the meat smaller.
The casing was not enough, I still have to make the rest half today.
Got my on line order casing but I did not check the mail box until after
I cleaned up the tools..... |

我吃过最好吃的炸鸡：
身在南方，不吃炸鸡都很难。大部人对炸鸡的印象大概还是停留在肯德基的水平。我当
年也是，觉得炸鸡有什么好吃的，就是鸡裹了面粉放进油锅里而已。自从去了很多南方
的soul food restaurant才明白什么叫真正的炸鸡……其中有一家店的炸鸡，是第一次
让我知道什么叫真正的炸鸡，也是我到现在吃过最好吃的。

一家在过了downtown往东的一个破房子。开车过去，一不小心就错过了，因为房子太烂
了，还以为是废弃了房子。当年我在的时候，刷的是绿色的，不知道这么些年过去有没

那个炸鸡，外面那层皮，很薄很脆，轻轻一咬就碎了。破了这层皮，咬到里面的肉，味
道刚好，很嫩很多汁……外面喷香的皮，里面粉嫩不腻的肉，我如醍醐灌顶一般，终于
明白肯德基糟踏了多少炸鸡的名声了……
