The actual battleground states are a lot different from the MSM, I.e. CNN.
Trump is winning even in those true battle ground state from I am seeing.
Hilary is done. I am not sure what her campaign manager tell her. But my

Another point I want to make is, as far as I know, NONE of these polls are
able to factor in the enthusiasm since it can't be measured "scientifically"
. Use a 1 to 10 scale, Trumpsters would be 9 or 10 while Hilary supporters
would be 2 or 3. Enthusiasm is actually a very important factor and could
make the poll number look foolish. Why? Because it directly affect the turn
out rate.

有一次找别的文件,看到了当年老师们给写的推荐信,
其中有一封是我一个committee member的,看的我直摇头,
竟然说跟我不熟悉 - 我跟他选过三门课,一起co-author过文章,
不过我能理解 - 他是我最开始的导师,我后来把他蹬了,关系一直subtle
不过即使我自己的导师,写的也非常朴实无华,当时我还觉得有点惊讶,
以为他会把我夸成花儿 - 毕竟我找工作的过程和结果都是极其顺利的。
所以你以为的lukewarm letter不见得就不好。牛人通常不随便夸人的。
我在 search committee中好几次,基本上推荐信不那么重要,只要没有
不好的言辞,归根结底还是candidate的实力怎样。 |

When you are looking for a faculty positions, you should be fully ready for
nailing down grants papers etc, not "expected" to get a grant and publish
some paper.
Basically, for faculty position, every letter should say you are a raising
start with superman/ woman ability. Otherwise it does not help. People who
already are faculty should know this very well. When some professor choose
to use lukewarm phases, they are giving bad references. |

每天都做面包。原来世界上,除了面包老爷爷,还有很多和我一样爱好面包的人啊。
我问起如何快速揉面并且可以揉到window-pane test的程度。他热情地邀请我第二天去
他家看他揉面团。这次真是受益匪浅。原来要迅速揉到window-pane test的程度,只需
要7分钟的时间,而且并不花很大的力气。只需要反复stretch and fold。7分钟后,面
团真的起筋了。我很感激朋友点通了我的一个盲点。我以前一直怕揉面时间过长(超过
15分钟,为过长),而导致面包不香了。原来揉面掌握了技巧,就是这么简单的事情啊。
朋友还借给了我一些面包书和面包光盘,我看了光盘后,突然觉得自己明白了一些新的
东西。看来,做面包也需要交流阿。我曾看到德州农民的博客,看到她参加了Peter
Reinhart的讲座以及平时参加一些面包培训班,真是很羡慕。好吧,我就是个学做面包

PS:最简单的面包也是值得我们去做的,因为最简单的东西才能锻炼和彰显基本功。
方子来自“ultimate bread”。
2 tsp yeast
1tsp sugar
300ml lukewarm milk
500g bread flour
1 1/2 tsp salt
egg glaze:made with 1 egg and 1 tbsp milk
将酵母和糖撒入125ml的牛奶里,放置5分钟,搅拌溶解。然后倒入剩下的牛奶。
再另一个盆中,放入面粉和盐,搅拌均匀。中间挖一个洞,倒入溶入酵母的牛奶。揉成
面团。
面团如果无法在10分钟内揉出筋,是那种可以windowpane test的程度,那么可以揉均
匀后发酵半小时后再揉,几分钟后就可以出筋了。
第一次发酵至两倍大,然后进行整形。
整形是先卷成一个loaf,然后弯成S型,放入loaf pan中进行第二次发酵,记住:两次
发酵都要盖上保鲜膜哦。
当面团发酵到高出烤盘2.5厘米的时候,就可以预热烤箱400F。这时候,开始刷蛋液。
400F, 烤45分钟。

皮特别的柔软。无油,堪比意大利面包和法棍,表皮却比那两款更柔软。
方子仍旧来自“ultimate bread”。
175ml lukewarm milk
175ml water
2tsp yeast
1 tsp sugar
500g unbleached flour
1 1/2 tsp salt
1tbsp milk, to glaze.
混合牛奶和水。将酵母和糖撒入125ml的牛奶和水的混合物中,静置5分钟。
再倒入剩下的牛奶和水的混合物,搅拌均匀。
将面粉和盐倒入面盆中,搅拌均匀。在中间挖一个洞,倒入酵母、糖、牛奶、水的混合
物。
混合均匀,揉成面团。
面团揉10分钟。
第一次发酵发至两倍大,然后将面团拿出来,揉成圆形面团,放置10分钟。
之后,将面团均分成8份,揉成椭圆形面皮,厚1厘米。每个整形好的面团上刷好牛奶,
然后撒上厚厚的面粉(用筛子过滤撒,不然会有大团面粉掉在面团上)。

在面盆中放入盐、面粉、玉米粉,然后倒入酵母水和水的混合物,以及油。
揉成面团,发酵至两倍大。
拍倒发酵中的面团,放置10分钟。
塑形成圆形面团,然后盖上保鲜膜发酵至两倍大。
预热烤箱400F。烤的方法为蒸汽法,可参见前面的法式面包烤制方式。
烤之前,在面团上撒上玉米粉。

1/4 cup coconut oil
1 teaspoon salt
3 cup all-purpose flour
