发帖数: 218 | 6 俺觉得海绵和戚风是国内人的定义非常模糊，在美国这边一般超市蛋糕房都写sponge cake，甚至
是一些香港饼屋卖的那种paper line cup sponge cake（纸包海绵蛋糕，不是美国的那个纸杯
蛋糕cupcake，我记得前段时间版上有个mm问过说很好吃但不能天天跑去中国城买）。如果按字面翻
译过来这个是海绵蛋糕，但实际是口感我吃起来非常柔软轻盈，应该是chiffon。我还专门去问了卖
这个蛋糕的香港烘培师，他就是用stand mixer全蛋打发的，成分是全蛋，多加一个蛋黄，粉，
vegetable oil。回来查了，这样又好象是国内的清水蛋糕，如下链接：

可是这个明显是分蛋chiffon做法。只是没有放水。
但是我吃上面的香港饼屋的那个全蛋打发的纸包海绵蛋糕（如果按国内定义和标签英文
是sponge cake海绵蛋糕，对伐）和这个国内的分蛋清水蛋糕没啥区别啊（这个分蛋清水蛋糕应该
算是chiffon，对伐）

呵呵，可能只能算年记了。因为今年的感恩节对我来说有点特别，因为上周刚刚拿到工
作offer，说感恩节之后开始上班。算得上是人生的一个转变了。当学生当得太久，对
于这个新的开始还是充满期待的。在这个感恩的日子，我首先要感谢两个最重要人，我
的一半儿，还有妈妈。
一半儿总说我这个人让他操碎了心，但他还是那么不厌其烦的帮助我。无论是学习还是
生活，我总是依赖着他，什么事搞不定了先想到要问他该怎么办，赶进度着急上火的时
候要找他寻求心理安慰。就这么被他推着，拽着，一个一个任务都渐渐完成了，毕业的
目标，找工作的目标也都达成了，在这个过程中我也学到了很多，渐渐的成长起来。亲
爱的一半儿，感谢你，我最大的感谢就是以后努力上你少操点心：P。 然后，是要感谢
这个世界上最给力的妈妈，妈妈在我忙毕业，跟老公两地的这一年里，无微不至地照顾
着我和小雪的生活。把小雪养得珠圆玉润，乖巧可爱。有妈妈在的日子总是最幸福的，

这Idea 是偷的Edible Arrangements的,连篮子都是它家的。
这是个没啥难度的小工程。不过从洗水果开始到最后只有两小时，草莓刚沾上巧克力没
来得及冷却就被插到篮子里了，因为害怕把它们弄糊了，后面就不太能大展拳脚。
垫底的那颗生菜头也很不给力，长得奇形怪状的，个头不够高大威猛，我还把它垫高了
很多。当天可用的水果不多，果篮内容略显单调。总之，能出来这个效果我已经挺满意
了。 |

灌了四十多磅香肠了，
用的都是合成肠衣，
是个朋友告诉我的。
想买的谷歌
“Collagen Edible Casings”
因为我自己灌没有用过天然肠衣，
以前在国内小摊子上加工香肠用的是天然的。
只说说我的感受，
没有足够实际操作的对比。
大概就是干净、方便。
不用洗、泡，
直接拉出来套管子上就用。
用多少抻出多少来，
剩下的还放原来塑料带里面。
不用放冰箱，常温就行。
我做中国香肠买32mm的，
每一管可以灌24磅肉的样子。
洋香肠用24mm的。
太细的不要买，
灌起来费劲。
缺点可能是弹性不足。
我灌的时候破了两次，
反正我在国内香肠加工店里面做，
没看到他们弄破过。
当然我经验不足也会弄破肠衣，
太贪心，赛肉太使劲了。
破了以后，不要拉扯肠衣，
直接剪断用绳子扎上就好。
还有一个缺点，
就是做出来的香肠，
不打卷，不够漂亮。 |
