you're screwed; so better renew your passport now.

she should give me I-94 till the passport expiration date, which is May 10th
2012, not Nov 10th 2011. Is this correct?

months all the time, so if immigration officer sticks to the rule, the I-94
issued to you will expire on Nov 10th 2011.

VISA is on my old passport, which automatically cancels all stamps once I
get a new one. Chinese embassy no longer accepts renewing passpost by
putting a stamp onto it. |

Who told you this nonsense? At least for entering the US, a valid visa stamp
on an old expired passport is still effective if you bring both the old and
new passport with you.
