the salt content in that table is too high, my tests show that 100g/5kg is
the upper limit, somewhere 80g--100g is all fine, given the current
temperature it won't spoil
the tricky part is probably the 花椒。 those sold in 99 ranch are pretty
much fake and don't have any flavor. u probably need to source from China ,
Sprouts sold them too many years ago and at the time they did taste
authentic.
I bought the casing online from ebay. 18$ of worth can probably make 100lbs

c******n 发帖数: 4965 | 6 right now it's already so cold. my first batch used the 115g/5kg salt
formula (too salty) and was stuffed on thanksgiving day. at that time the
highest temp during the day was 74 or 75. I put them inside garage and had
no problems.
right now it's often freezing at night so definitely no problem of rotting.
it's quite wet during the last storm so even inside garage I had a bit of
mold growing on the sausages during the storm days. but once the storm
finished I hang them outside under the eaves.
as for animals, yes that's a concern. raccoons crows squirrels all have to
be taken care of. I hang them high , so far animals have not been able to
eat them
