做的是中国版的,改良版的,简化版的:
牛肉买中国/日本韩国超市里的牛肉片,这样薄,容易入味,熟的快。
加油随便炒炒,熟了以后,加: 酱油,糖,少量醋,一小勺MISO,水,盐。
下: 蔬菜类,葱姜类,蘑菇类。。。
水要1 CM深就足够。因为我们的目的是用水蒸汽把素菜那一部分闷熟。
熟了以后稍微晃一下,让素菜进一点儿味道就OK了。水要是太多,就没味儿了。

STEW的BASE可以是清水,可以是鸡汤,可以是西红柿(炖出来红色酸酸的),
可以是CREAM OF MUSHROOM(请买罐头),
主料:牛肉, 猪肉, 鸡肉, 鸡腿, 排骨, 大骨头, 或者是丸子(买,或者
自己做,很多店买冻着的丸子)
辅料:块状蔬菜: 土豆,西葫芦,BUTTERNUT SQUASH,地瓜,豆腐类,豆干类,
罐头豆子类(干豆子得提前泡好),总之不是叶子的蔬菜
如果叶子蔬菜,快出锅的时候放进去。
很少的盐,不用油。炖。几乎2-4小时搞定。
一般我是吃完晚饭慢慢炖。第二天再吃。:)

中国菜谱里,很少看到炖嫩叶子吧? 这是印度做法。
做出来真好吃。巨大一锅被抢光。 :) 大概炖1个多小时。

YH介绍从DC来的网友P兄见一面,然后去Whistler一边的harmony、symphony去玩玩儿。
结果一看晚了怕下午天气不好symphony去不了,就先坐p2p去Whistler,电话也打不通
只好放了P兄的鸽子,抱歉了!从Whistler的Roundhouse下到harmony的路比较难搞,打
算找到Rabbit Tracks或者G.S蓝道下去,却怎么也找不到标示。于是就沿着盘山路过去
,估计是Ratfink黑道,娃们下降太快,最后不得不下到一个绿道上,可能是Marmot,
小孩们的单板走了不少路。
上了harmony到顶,发现原来这是Little Whistler Peak小顶峰,而且四通八达,有
pika's traverse绿道回roundhouse,有burnt stew trail绿道转jeff's ode to joy蓝
道去symphony,还可以走后山the saddle蓝道下到Peak Express,从Peak还有一条下到

plenty. Or at least that way on my home's dinner table--Mom liked to stew it
with tofu. Somehow it later became harder to find 明太鱼 on the market. I
still kinda miss the extremely fresh flavor of the fish/tofu stew.

炖30-50分钟就足够了。炖多了就柴了。
加料: 酱油,盐,糖,酒。 为主料。
其他的看着加。 蔬菜啥都OK。 要有创意。我是啥都敢加的。
比如我最近做的STEW,都是加:若干豆腐类(豆干,豆泡。。。),
若干蘑菇类,若干块状蔬菜类(西兰花,菜花,土豆),若干豆角类,
若干叶子菜类(出锅时候放)。。。。
若干西红柿(一开始就放,主要是为了汤汁味道),有时候还加尖椒提味,
若干豆子(为了浓汤)
我不太会做牛肉, 喜欢吃炖的烂烂的 juice多的牛肉
1.我打算先把肉煮熟

和方子不一样的是:
1)因为是stew, 我就整块下锅而不像方子提到要切片。
2)把方子的糖减半,加了盐平衡味道。
因为是块状肉,所以最后是280F 20分钟翻一面,共40分钟。时间也可以根据自己喜欢
的口感调整。关系不是太大。
成品非常成功,比商业产品还好吃,因为口味和口感都能很好的掌控。
吃牛肉干,喝冰啤,看奥运。----爽!~~

for family of 4, I would suggest 4 quart for cooking stew meat. 6 quart is a
little bit large for cooking stew, except you cook soup and stock very
often, I don't think 6 quart is suitable.

it could chip if you accidentally bump on something, but it never happened
on mime.
If the coating chip, the most likely result is the pot would get rust on

太老的表现是咬不动,尤其是有筋的部分,怎么都咬不断
太柴表现是肉全碎成了纤维一样的质地,口感很差
之前尝试过两次失败之后,现在终于找到了诀窍(不用高压锅)
分享一下
1、最重要的,挑肉的部位
老美店有一种肉叫做“stew meat”,切好的小块
这种肉炖出来不老,但是比较柴,尤其是越贵的越柴,因为越贵的脂肪含量越低
这种肉第一次炖出来还能吃,反复加热几顿饭之后就柴的没法吃了
老美店还有各个部位的牛排,没切过的。
其中最贵的里脊肉可以炖的很嫩但是比较贵,一磅经常10几刀,还见过20刀的
其他常规用来做牛排的部位比如T-bone, sirloin这些部位都比较老
因此买肉应该去亚洲超市或者老莫超市,他们卖shank
shank一般一磅只有1刀多,中间一块圆形的骨头,里面有骨髓,外面有一圈肉
shank是做红烧牛肉最好的部位,而且价钱只有老美店牛肉的几分之一到十几分之一
建议做红烧牛肉可以用stew meat跟shank一比一搭配
2、其次重要的,是注意全过程的水温都尽量不要低于90度
我之前是这么做的:煮开一锅水,把肉放进去,等5分钟,水开了

读了说明,才知道是stew来着的。
我加的水没过了那块牛肉,想问一下,要是水煮着煮着慢慢变少,肉露在水面上,我要
不要再加水? |

炖肉没问题,我不会炒菜,结婚以来一直是靠stew和oven当家的
就是有时大人没有stew,想帮宝宝当场单独做一点,常搞砸 |

刀了。只有品质最低的才6-7刀一磅。羊肉没有10刀以下的了。前两年卖7刀的lamb
stew,现在10刀了。小羊排直接奔20刀去了。羊脊椎骨都得15刀。 |

boston. however, don't be fooled going to jordan pond house. their lobster
stew is a total rip off! a bowl of stew just has 2 tiny picese of lobster
and by that price you can have a twin lobster! just go there and order
something cheap and enjoy the scene. |

美国店的可能不是标准的牛腩,一般我买beef chuck,做牛腩煲。因为比较肥,肉分层。
brisket还是有点瘦了的感觉。 |

这个周末去了那个decalb farmers market里面的buffet,很多印度菜,里面的山羊肉
stew和牛肉stew很好吃阿,也很便宜,称重的,几块钱。。 |
