有顾客给boka chicago的店员狂发小费,那么这个店有什么特别好的出品或服务吗?
首先,这个店的厨房工作人员100%都不戴帽子,不戴发套,以此照片示众,实为商家
的大忌,仅凭这一条就违规了,如果是政府部门来检查发现这一点,直接就可以开罚单
。 由此也能看出这个店的管理不正规。
其次,我从网上查看了它家的菜谱,和其它西餐馆一样,总共只有一页纸二十个左右的
出品,我从中国人的角度看十分单调。
其主菜一共七种:

有的时候完全禁止反而会加速珍稀动物的灭绝,南非在09年禁止了犀牛贸易禁令生效以
来,南非死于偷猎者之手的犀牛的数量是实施禁令前的近10倍。于是17年又合法了。
原因很简单,因为完全禁止了合法途径(养殖自然死亡)使得黑市成为垄断,价格暴涨,
偷猎分子会更加猖狂。
这个道理用到老虎上太正确了,中国圈养老虎成千上万,老虎尸体堆积如山,完全完全

"H1B is designed to get cheap labor, first you have to accept conditions
from the company whatever they are so you can get into the process, second,
if you lose the job with that company you have to leave US immediately. If
you want to change a job, your previous employer has to agree to do “H1B
transfer” and you must be at least 7 years on H1B before you can “unchain

了,大家总的来说不知道该怎么处理,"虽然学校有义务给学生提供最好的机会,但这
种作法有些poaching。不是我们这里的common practice。"决定请她来给个技术talk
,如果她讲得好,学生自然会私下去找她询问录取的事。

本来是想用白酒poach的,但是买不到酒这种事情也是没有办法的。。。鱼扒不想囤冰
箱,于是煎了吧。
1. 小半只柠檬小半只青柠挤汁,加盐加黑胡椒和basil碎,调些橄榄油,把鱼扒在冰箱
里腌上至少一个小时。
2. 蒜切薄片,铸铁煎锅烧热,喷些油,煎金黄,移走。
3. 鱼扒用煎过蒜的油每面煎大概5分钟不到,喷一小勺伏特加,盖一小会儿锅盖,盛到
热盘子里。
4. 关火,余温融化黄油,炒干一小把香菜碎,拧些海盐和黑胡椒,再挤一点青柠汁,
堆在鱼扒上。
时间火候刚刚好噢~ 鱼骨附近恰恰好熟了的样子(其实我也是看着像是差不多好了瞎蒙
的 > <)。

喜欢苹果味可以试试看apple cider
我那样说主要是觉得3样东西味道重复太多了。red wine本身一样味道就很重了,通常
是没有的时候拿红酒和酸性的材料混合做替代,3样一起加没有太大意义
新鲜鱼的话其实简单调味是最能突出鱼本身鲜味的,steaming和poaching里一般也比较
多用浅色的酒和液体调料,不过这些就是个人喜好了

You're just right.
但apple cider vinegar 不会产生类似apple的香味。:)
任何vingeare都是之后的sour 的味道
actually, 我的意思是说,
要么加wine vinegar + wine 不用任何lemon juice or lime juice
要么用any alcohol +lemon juice or/and lime juice
用lime juice 是非常thai cuisine 的做法
因为lime 的酸碱度明显高于lemon juice
每种都不同,每个人口味不一样,自己可以调整。
就像日本cuisine里的salad dressing
又加lemon juice,+lime juice +yuzu juice
调出来的风味完全不同
越是善用这些酸味,越是调出鱼的鲜味
倒是酱油会将鱼或肉的鲜味完全掩盖,:)
poaching 的做法完全不同于steam。

你说的这个似乎比较接近正宗的温泉蛋。
刚搜了下温泉蛋,发现的确不是开水煮的,而是热水泡出来的,蛋白没完全凝固,蛋黄
看起来像uncooked,实际上已经是firm。
实际操作起来的话,主要是温度控制比较麻烦(70°C or 158F,30-40 min),再就是
蛋的质量要高。

egg which is originally slow cooked in the water of onsen hot springs in

前后四个Apple recruiter找过我。第一个直接phone interview然后要我做一个
challenge,
没理他们。第二个我吸取教训先谈待遇,结果recruiter不知道Equity是什么,解释了
半天
然后说要问manager能不能match,然后没后文了。第三个以为我说的Equity是stock
bonus
,说他们也有,但是不能告诉我target是多少。我说stock bonus我也有,都没告诉你
们,
我要的是matching equity upfront。然后他说你要这么说我就没办法了,好像我是在
敲诈一样。第四个我就直接不回了。
Apple那么多cash,小气成这样。以前jobs还签no poaching的秘密协议。不是啥好地方。

Apple?千万别做。
上次给我code challenge的还指定语言,跟他们内部用的一样。既要求code质量,又要
看算法最优性。一看就是要拿结果直接去用的。Apple真是恶心,对自己员工搞no
poaching
也就算了,来面试的也要榨油水。
你就算要做,也要他们签个协议说这个code版权归你,不能用于商业。我以前有公司面试
就主动提供我这个协议。

呵呵。for dental, I were not asking for myself.
These are acadamia jobs, so the benefit is not as good as silicon vally.
Unfortunately, because the cloud and big data field is so hot (we
benefit from this), all of our previous programers were poached by
