界排名分别为第一，第二和第六！这个片段是我在一本书“Talent is overrated”(by

其实非常误导，让人以为是烤箱里烤，绝对错误。做牛排要高温快火。在家里最好在户
外bbq炉上炭火烤，其次用烤箱下面的灼箱 (broiler)，再其次用平底锅煎。
如果煎，就不要买带骨的，比如tbone或者porterhouse，因为肉受热后会收缩，骨边的
肉就会因为被骨头架着而受热较差。
ribeye最肥，最有牛排味道。要知道牛排肉分级的依据就是ribeye肉里面夹的肥肉多少
。日本的所谓雪花牛排也就是瘦肉里夹的肥肉多。当然也有人会觉得太肥。strip主要
是瘦肉 边上带一条肥肉。这条肥肉长在里脊肉边上，和一般肥肉不同，其实口感更像
烧得软糯的筋。初做牛排可以从这两种肉开始。tenderloin特点是瘦和嫩，对做法要求
比较高，做不好就难吃了，还不如切片去炒。
除了部位，还要看肉的等级。最好是prime，超市一般没有，costco倒是有。其次是
choice，超市卖的和多数牛排店里都是这一等级。有的便宜地方也卖select级的，不值
得，别坏了兴致。age不age的，个人感觉overrated，差些的肉上区别大... 阅读全帖 |
