小小的全麦面包，也是实践了大半年。自从新年以来，是0失败率，所以和大家分享下
。BTW,照片也不入流，大家包涵，鼓励为主哦。
方子是网上抄来的，很简单。
•1 to 1 1/4 cups millk, lukewarm (我以前用的是冷水，难怪发不起来。原方
说夏天用1杯，冬天1又1/4杯，我每次都用1 1/8杯）
•1/4 cup vegetable oil
•1/4 cup honey, molasses, or maple syrup（我用的agave nector)
•3 1/2 cups King Arthur Premium 100% Whole Wheat Flour(一个小tip, 去掉
1/4cup whole wheat flour, 换成1/4cup的potato flour, 面包更加松软，而且室温下
放保鲜袋里一周没问题）
•1 packet active dry yeast

1.5磅loaf相差不太多也不打紧。
2磅loaf，若是比例不合适，面包机就会相对吃力了。主要表现就是烤出来的塌下去。
dry milk 一般不像你这么代换。
因为美国的whole milk 一般含有 85% to 88% water.
dry milk放进去可以让考出来的面包松软可口，milk一般来说是不能替代的。
不过milk也可以试试先煮沸放凉之后再加。（milk里有阻碍gluten的东东） |

很多，比炒菜容易。全家吃1天。其他冻上下周吃。 ：）

我也买了好几个小面包，然后人家跟我说只有loaf bread可以。。。
经常去那家买面包。现在有集点卡，买plain loaf bread可以盖一个章，集到9个送一
个免费的。
今天去买蛋糕，付了钱等店员包装。一个韩国女人买了1个plain bread，3个花式小面
包，我亲眼所见，店员给盖了4个章。我当初拿到stamp card的时候店员就强调说只有
plain bread才可以有盖章。因为赶着回去，也没有当场理论，去问清楚。回到office
想起这件事，觉得很不舒服，不是在乎有什么便宜可占，可是那么明显的歧视让人受不
了。去中国超市买菜也受气，金门肉铺的大叔脸拉的比驴脸长，上次老爸让我去买
半磅肉眼，说半磅不卖。check out的阿姨我和她说谢谢，眼睛都不抬一下。下次看到
一定问，不给解释，就再也不会去那家面包了，面包虽然好吃，可是没有骨气的事情不
能做。请大家传播！ |

说到日耳曼香肠，北欧的海鲜，都有很多种做法和美味，你们盯着冷面包和午餐肉，就

就说三明治吧，且不说各家个不同，三明治的面包就有四五种，味道各不相同，里面的
sauce就跟不说了，估计你们也只敢吃奶黄酱吧？金枪鱼馅、火鸡胸肉馅看上去颜色差
不多口感完全不一样。
说到火鸡就说烤火鸡了，你们多少人去口碑好的饭店吃过火鸡？火鸡胸肉自己烤出来很
干不够Juicy就说这东西没法吃？就好像电视上那些做不来豆腐的人把豆腐捣烂了做沙
拉Topping然后说这玩意儿口感太差了一样可笑吧。
再说汉堡，你们除了麦当劳肯德基大概没吃过什么汉堡吧？而且估计还是小时候在国内
麦当劳肯德基看着别人吃馋涎欲滴，最后吃了一两个达成梦想以后就说什么这东西我才
不要吃于是就天天绕路的那种吧？考究的汉堡Sauce是要单独调制的，不是Ketchup啊

8月28日下午，一则来自美国主流媒体ABC Channel7 的报道引发了生活在美国首都大华
府地区华人社区的关注。根据ABC Channel7 Kevin Lewis的推文指出，由在美华人冯建
军拥有并经营的开心农场，“Happy Farm”被美国政府关闭。原因是因为其无照经营并
销售农副产品，同时在其农场养殖的家禽中检疫出了禽类病毒污染。
美国首都华盛顿特区的ABC本地频道近日报道了一则独家新闻：位于马里兰州Dickerson
的一家出售肉类和鸡蛋的华人农场被勒令关闭，有报告指农场动物生存环境恶劣，甚至
自相蚕食。
动物管理部门称，“快乐农场”有800多只鸡鸭鹅等禽类，但没有牌照销售农副产品。
目前农场所有禽类因感染禽类病毒已被扑杀。
农场华人经营者冯先生在接受采访时称自己没有做错事。目前他被控虐待动物，可能面

人（名单上7人）。这个组现在有两个人分别时不时长篇大论的email给我发牢骚。开始
，跟我说那些没来的人联系不上，需要教训。我一边说你们要想办法处理，一边痛扁了
那个还在国外，预先请假，只发Email不打电话的学生。
第二次上课，这个组人齐全了。我守在边上看他们开会，并告诉他们，此时此地，如果
你们不能work out，我会想办法把不适合的组员分配到别的小组。他们表现很平静，说
是没问题。
现在又过了两周。这俩学生分别来信，痛斥组里另两人不按时完成任务，并要求换组。
我说学期过半，换组还是免了吧。你们的情况现在看和普通的组没有区别啊。那什么
social loafing之类的事你们自己需要handle。我不了解细节，也不能贸然偏听偏信。
要不然我给你们加一个自我评定的机制，组里大家互相评判好了。两人分别激烈反对，
