For ricefield eel (鳝鱼), it is a bit different. Ricefield eel undergoes a
natural sex-changing process from female to male in its life cycle. This
natural process will, however, limit the productivity from eel farms. Thus
sex hormone treatment is given to ricefield eel to stop or reduce the sex
changing.
Since hormone use in fish farming is not that much regulated in China, the
amount of hormone (or antibiotics...etc) use and the amount of left-over
impact is ....eh...unclear.

standardized, but the general information/impression about Asia farm fish
has been quite concerning. Hormone is not the only issue though, there are
antibiotics and other pollutants.
And the actual impact on human consumption is so far unclear, or at least I
am not aware of any concrete experiment & conclusion.

sex change on ricefield eel, I did a Google and found these:
