I use thin spaghetti.
Cindy’s Chow mien, stir fried noodles
4-8 oz sliced meats (pork, chicken or turkey, whatever you like)
6 soaked and shredded Chinese dried black mushrooms (the key flavor’s of
this dish)
Sliced green vegetable (choice one or two from Boy Choy, cabbage, sweat pea
or celery)
Shredded orange/red color vegetable (carrot, orange/red pepper)
Pressed TOFU (optional)
3 chopped spring onions
3 tablespoons oil
1 tablespoons soy sauce
Chinese cooking wine,
Salt
1 lb thin spaghetti
Cut vegetables into thin slices or match stick sized strips. Meat should be
sliced into thin strips or cut into small pieces which will cook quickly,
mix with soy sauce, Chinese cooking wine, then cover with corn starch. When
you prepare your ingredients, you can boil water at the same time to.
Add some hot oil to the wok or frying pan, start with the hard vegetables
first, tossing them in and keeping them moving. As soon as their colors
begin to intensify add the next soft ingredients. Put them in a bowl, cook
vegetable separate with meat for better color. You can cook different color
at different time. You can put thin spaghetti to the boiling water at this
time.
Add more oil, cook the spring onion, meat and mushroom together in this
order, add pressed TOFU if you like, add soy sauce and salt, add a little
bit water to make it more sauce like.
Add the cooked thin spaghetti to the pan, mix up, add the cooked vegetable,
and mix up. |
