1) You need good beef. A good beef should be marbled. A perfect
lean beef like eye of round does not give you good results - you
can add some fat to it by laying bacon on it to make it moist;
2) Roast at proper temperature. The lower the better. 300F is good
for a long and low temperature roasting, which lasts hours. You may
crank up to 500F once it is roasted perfectly, to give it a nice
crust.
3) Use meat thermometer. Set the temperature about 5F below what you
want to achieve. After roasting |
