茴香阿。
一．有關茴香
中菜裡的香料－「茴香」，原本指八角，又名大料，「西遊記」裡所謂川椒大料，就是
花椒和八角。使用部位是種子連帶星形果皮。
後來Anise傳入，因為香味和八角類似，所以被叫做洋茴香，逐漸誤稱為茴香。使用部
份是種子。
Fennel也被翻譯成茴香，大概因為它的種子和Anise相似。除種子外，Fennel本身肥厚
的球莖可以當蔬菜吃，所以又被叫做大茴香或茴香芹，種子也就稱為大茴香子fennel
seed。
Dill是蒔蘿，又叫小茴香，全株新鮮時當做香味蔬菜食用，就是包餃子用的茴香。乾燥
種子也是香料，就是小茴香子dill seed。
