以国际标准划分，啤酒常以发酵法为限分为两大类型，顶层发酵与上发酵法被统称为艾
尔；低层发酵与下层发酵被称作拉格。温度是决定发酵法的基本分水岭，在上发酵时，
所需温度为15～24摄氏度，酵母大多在水面进行发酵反应，由于温度较高，酿酒师把它
称作“传统酿造方法”。而下发酵所需的温度为5～10摄氏度，由于密度的改变，酵母
大多会沉淀到发酵槽底部才开始反应。下发酵方式的最大优点是不易变质，通过整个过
程便可预知啤酒的口味，由于大规模的工业化啤酒排斥“意外惊喜”，偏好“统一口味
”，因此，除英国风格的啤酒外，市场上的多数啤酒均由这种方式所酿造。人们常说的
艾尔、波特（Porter）、塞多特（Stout）、阿尔特（Altbier）、特酿以及小麦啤酒等
，均为上发酵啤酒；贮藏、慕尼黑（Munich）、博克（Bock）啤酒、黑啤等，属下发酵
型啤酒；除上下发酵型外，自然发酵啤酒亦形成一种特有的风格。在荷兰啤酒爱好者范

功。往冰块上倒，泡泡有大半杯，喝起来就跟混了咖啡的奶油似的。
Rum tequila之类的我也喝。以前本科的时候喝红星二锅头，这次回去去超市买了一瓶
，觉得怎么那么差。不过国内还是有一些好的白酒，喝起来非常香。美国的白酒没有那
种香味。红酒太文艺，不适合喝了之后编程序。 |

programming方面为例，列举几个看到的网站和现象。自己只是初学者，观察的不准确
的地方或者说错的地方欢迎指正
kaggle算是做的比较有影响的，通过competition拿奖金或者公司招人，似乎之前还有
几个公司的compeition，现在比较少了，要么是学术性的会议competition放到kaggle
平台，要么是某些教育性的练习，还有的是某些公司自己遇到的问题，可是感觉提供的
数据信息太少，它可能是怕泄露机密，但就给一堆没名字的feature然后去预测click
through真的可以？如果比较简单能做出来，也不用贴出来悬赏了吧？
有些competition的leader成绩很好，进去一看是deep learning的phd们，感觉是专业
队员到业余俱乐部炫耀一下顺便做个广告的。还有不少参加者就是machine learning的
phd在读学生。

cans. Its in both regular and light. Its been dropping in price from its
first sale price at 7.99 and i've been buying it since then. To set the
table.. I drink mostly imperial Russian stouts and west coast ipa's but when
I throw parties and bbq's I like to have a domestic light lager on hand

Guinness Draught不是Guinness Dry Stout,后者度数高,而且很苦,苦的失去了愉悦的
口感.
另外, 强力推荐Belgian啤酒,那个Blue Moon也是Belgian啤酒,喝了以后,我就抛弃大多
数别的啤酒了. 麦香醇厚的另人难忘, 美国买的到的好象就三种:Stella Artois,Leff
和Hoegarden.
最后, 如果买的到哈尔滨啤酒, 不会失望的.
少喝点, 还有点意思的:) |

发帖数: 101 | 29 啤酒按照酿造方法分为两类， ale和larger. lager的酿造是bottom fernentation,
酵母(yeast)在容器底部发酵，发酵温度低，时间长。 据说heineken的发酵时间是72天，
yuuuu!!! lager在德语是lagern， 意思就是to store.
与之相反，ale则是top fernentation, 发酵温度比lager高，发酵时间短, 大概是一个星
期左右。 当然，用的啤酒花(hop), 酵母， 麦芽(malt)等原料也不一样。
hop的种类很多，欧洲的品种移植到美国后还有变化. 有些microbrew的啤酒瓶上会标明用
的是哪些hop。不同种类的啤酒用的barley/barley malt也不一样，处理方法也不同，比如
stout/porter用的barley是烤过的，有些还用不发芽的。
lager的种类较少，pilsner可以算是最常见的一种， 起源于是捷克的pilsen(可能拼错
了). pilsner urquell算是其中最有名的(好像现在这个牌子属于Miller). 我不常喝
pilsner，倒是分 |
