我也想说这个，温度其实要控制在225f-250f之间，200就低了点儿。好吃的原因有很大
一部分来自排骨里的肉筋，组织，和脂肪。在慢火下，肉筋和组织会分解成鲜嫩的肉汁
，吃起来有特别鲜的感觉。
同样的做法可以熏鸡，鸭，猪肉，牛肉。当然smoker有smoker的好处，但烟熏的吃多了
也不太好。 |

need to have a place to smoke freely, the preassumption is that this right
shall not deprive the right of other non-smokers, including babies. I don't
see a problem of someone smoking outsite the house. How he or she wants to

咱这是poor man smoker，家里太多家伙了，LD不prove进新的smoker。我
之前camping一直用这个weber人的charcoal版，非常的满意，但上次在
federal land camping，那里只能用gas，禁用charcoal，我已在琢磨升级下。
后来看刀这个propane版的review，有一哥们用它做出了无敌smoke salmon，
很受启发，买回来尝试了下。

发帖数: 1038 | 25 用电的我没用过，朋友说在里面直接放一些松球就可以了。我不知道是不是可以调节温
度。
我用的是烧木炭的，先把BBQ的木炭点着了，然后上面铺满松球，把smoker底下那个盆
填满就行了。盖上盖子，关上小门，大量烟就出来了。不用担心灭，木炭底下有孔通气
。一盆可以烧（熏）5小时左右。两小时过去翻一下就行，所以不用守在边上。如果想
熏得干一些，中间补一次木炭或者松球。
我上面链接里的smoker，$59. 有三层grid 位置，上面两层可以熏肉，每一层可以放10
磅肉，一次可以熏20lbs 肉。最底下那一层适合BBQ用，此时把阀门打开，盖子掀掉，
就有明火了。
买有肥肉的猪肉，切成5-10厘米厚的片状（太厚了，熏透的时间要长一些），楼主肉片
那个形状那样的，然后抹一遍盐，放一晚上，第二天熏。腌制方法可以根据自己口味调

发帖数: 4571 | 28 第三天（周日）早晨和钓鱼迷上了全天的船。事先查天气，风浪会比较大。我事先吃了晕船药。每人三个杆，一个drifting 钓king fish (king mackerel), 一个钓底， 还有一个轻杆挂lure, 等dolphin-fish (mahi-mahi)出现的时候cast。 我们还想玩trolling, 但没占到船尾，也就罢了。钓king fish的rig是3个大钩子连起来，然后分别挂在bait fish的头，中部，和尾部。由于船家提供的mullet比较大，最后一个钩子实际没达到尾部。到达钓点，开始drifting 以后，陆续有人上king fish。 往往都是杆子猛地一弯，然后king fish就开始左冲右突地fight. 如果king fish横着冲，往往就见一个人抬着杆子从船尾fight到船头，大家都让路。还有一种情况就是king fish急

发帖数: 604 | 29 话说上次钓到好几条三文，冰箱里塞买了鱼肉，除了煎了烤了没什么其他的做法，又因为上次在cooper landing吃到的烟熏三文鱼特香，于是起了自己烟熏三文鱼的想法。以前从来没薰过东西，也没见过人薰东西，出国前也没吃过熏得东西，自觉没把握，所以事先对LG说好薰坏了不要怪我。
问朋友借了个smoker grill，到网上查了查做法。自己动了手起来。
1） 鱼肉放冷藏室解冻一晚。找个大容器（不要是金属的），一加仑的水兑一杯盐（没有加碘的，加碘的有金属味），一杯半红糖，切了几瓣蒜。因LG不喜欢甜的肉食所以我减少了糖，做出来的没什么甜味。以我的口味至少两杯糖是应该的，网上有人配4杯糖。注意要先用（部分）热水完全溶解糖和盐，然后整个水放到冰箱里冷下来再放鱼肉腌。
2） 腌肉时容器要放到冰箱里，防止细菌增长。一厘米厚的鱼肉要浸至少8个小时。厚一点的要更长。厚的我腌了12个小时觉得还是味道淡了些。
3） 鱼肉片捞出来，擦干水，晾几个小时
4） 这个 smoker 要用 charcoal ,先点燃charcoal放到盆子里，烧到有白灰出现，然后洒上几把泡过水的木屑生烟（alder |
