回忆一下：（从chili开始）
1、中国城家园饭店川菜馆（被chili折磨的不行，boss说让你回趟天堂吧）；
评价：有人说在US吃不到正宗的中国菜，不知是别人太挑了，我觉得还不错；天堂谈不
上，算肚子回了趟国吧；

评价：BOSS说这里的steak还不错，注意：是还不错，意思是后面还有更棒的steak可期
待了。点了份T-BONE medium。T-BONE是我点的，看图说话嘛，medium是boss帮我纠正
的，因为我本想说要well-done的，中国人嘛，血淋淋的咋吃啊？土！果然，medium嚼

发帖数: 34 | 29 我下午去shopping，买到了很新鲜很诱人的chili cheese面包，当时就算计好了这么好的
面包，一定要喝罗宋汤，美的直流口水。可是买牛肉的时候突然脑子蹦出mad cow，吓了
半死，赶快扔掉牛肉，准备就来锅素汤，于是拿了卷心菜，洋葱，罐装的西红柿酱和西红
柿slice。汤炖的稠稠的，没有牛肉仍是好汤。面包拿去toast一下，顶上的cheese嗞嗞的
响着，香味扑鼻。美中不足是chili是那种很辣的墨西哥辣椒，于是辣椒统统被我丢掉，
只留下chili香味，一大碗汤和一个面包进肚，心满意足。
沙和尚今天惨兮兮的，零下20度严寒加大雪中饿着肚子10点才回到家，冷碗冷灶，自己可
怜巴巴的做白水煮面。
我打电话过去炫耀，说我今天吃的特好，我吃的是没有牛肉的罗宋汤和没有chili的
chili面包~~~
沙和尚滋溜滋溜的吸着面条，停顿了一下，兴高采烈地说：我吃的是没有龙虾的姜葱龙虾

俺正在吧啦吧辣的问VET问题，就听见＂嘶嘶＂两声, 说时迟那时快，

干pad thai粉 温水泡上
蒜切碎，葱切段
胡萝卜切丝 绿豆芽洗净
鸡肉切丝
一个鸡蛋
鱼露 （我没有，就用 海鲜酱 蚝油 代替） 生抽 糖 辣椒酱
热油爆香蒜碎 煸炒鸡肉至变色
这时候粉应该已经半软了 控水放锅里煸炒至柔软又不失筋道的程度
（如果总是不够软 可以稍微加点水）
粉基本好了之后下面的动作就要快 以免粉煮过头
迅速按自己口味加入调料 拌匀 把粉拨到一边 放一个鸡蛋在锅里炒熟
然后放胡萝卜 豆芽 葱段
所有东西拌匀 出国
上面再撒一点花生碎就更好啦

原料，然后倒入stock（清汤），然后simmer的。
比如这个recipe：
Title: Turkey Chili

Melt butter in heavy large saucepan over medium heat. Add onion and celery

起因是猪头说突然想吃了，这个礼拜俺们这嘎达天天下雨，温度也跟着节节倒退，冻死
了~
冷冷的天气，吃一碗chili再合适不过啦~
下午的时候炖上，锅子灶台全收拾干净了，家里人回来干干净净上菜~配了一碟烤蔬菜
和自家做的面包，吃得很满足~
chili一般都是用肉末做的，换了牛排，处理过程要麻烦些，但是，那口味显然是肉末

条妈非常喜爱的墨西哥美食：enchilada。
enchilada最初是墨西哥的一种街边小吃，是用玉米面饼（corn tortilla）沾着辣椒酱
（chili sauce）直接食用的。在西班牙语里面，“enchilada”是“enchilar”的过去
分词，而enchilar的字面意思，就是“用辣椒调味”，真是非常贴切简朴的名字~
不过今天我们在墨西哥餐厅里面能享用到的enchilada，跟最初的街边小食相比，有了
很大的变化。一般都是裹了各种肉类，豆子或者海鲜的面饼，撒上酱汁和奶酪烤焙而成
的。制作工序复杂了很多，味道自然也大大提升了！因为酱料选取的不同，enchilada
又可以有十几个不同的名称，最常见的当然是用各种辣椒（chili）制成的酱汁做成的
。不过薯条妈今天要介绍的这款，是用番茄作为主角，辣椒作为配角来制作酱料的。酸
