白沙国家公园位于美国新墨西哥州，Chihuhuan沙漠的最北部的Tularosa盆地，世界上
最著名的自然奇观之一. [1] 而白沙公园里白沙的形成则是由于奥特罗湖几乎完全干涸
了，而钙和硫磺却留了下来, 这些矿物质形成了石膏岩(gysum). 在冻结和融化，潮湿
和干旱等自然力的作用下，石膏晶体最终破碎成沙子。在大风的作用下，沙子不断推进
，最终形成了我们所看到的白色的沙丘。

承认错误更需要底气
最近很少写博文，尤其是长博文。今天是元旦，我谨代表我自己以及小小（还没有征求
她的意见呢）祝大家新年快乐、万事如意。不过我还是要吐槽一下。刚看到编辑部也专
门发帖祝福大家，但看到“科学网祝广大网友元旦快乐！”之后我还是被刺了一下，如
鲠在喉，不吐不快。科学网是科学网博主的科学网，在科学网博主面前，编辑部何德何
能代表科学网啊？当然，这又确实是中国现实的某种折射。
下面转入正题，今天我要讲的题目是“承认错误更需要底气”。承认错误需要勇气几乎
是一句口头禅。但是我们要知道，勇气其实来自于底气。下面讲两个例子（学习一下反
面教材的风格）。一个是高中学习期间的一个观察，一个是化学界的一件公案。

碱面(苏打、纯碱)：学名碳酸钠 化学式Na2CO3碱面，就是食用碱，英文名字叫dietary
alkali，主要成分是碳酸钠，质地较起子粗糙。因为颜色相似，所以区分方法主要是
通过手搓的质感。在用传统面肥发面中用于中和多余的酸性，此过程称之为“揣碱”。
碱的用量要适当，过少称之为“碱小”，则面死而发酸，过多称之为“碱大”，则开花
而色黄。用市售活性酵母发面则基本不用碱中和。碱面在熬玉米粥时酌量放点可增加粘
稠度，常喝这种玉米粥尤其对有胃酸的人有好处，而不必去专门和什么苏打水饮料。这
就如同多吃各种蔬菜不必专门买维生素药片，是以食代疗的好方法 |

Guadalupe Mountains National Park里面没有paved的路，好像就是给hardcore hiker
准备的，没时间在visitor center附近的小trail看看就是了。

门，可以吃完烤鸭满楼道找同学要吗丁林来吃。十来年转眼就过去，心态再也不同
。开始担心眼角会有皱纹，害怕每天维生素的摄入会不足，开始学习养生。
周末的时候，在Barnes & Noble看到一本讲养生的书，叫Stop Aging, Start Livi

作者Dr. Graf说，人体最佳的状态应当是在弱碱性而不是酸性的。很多食物虽然尝
起来是酸味，但经过人体消化和吸收之后反而变成了碱性，所以是有利于健康的。
而几乎所有的肉和鱼都是酸性的。Dr. Graf推荐大家每天早上起床先喝一杯Alkali
nizing Cocktail，有助于身体保持碱性环境。其中包括螺旋藻，不过是optional的
