Whitewashing the director Zhang Yimou addresses this in his interview.

background to the worldwide audience through a film language that they are
familiar with. It is synergistic filmmaking. There’s a saying in Chinese:
借水行船 Use the water to move the boat. In this case, we are using
Hollywood filmmaking to introduce Chinese culture."
So basically he wanted white supremacist America to watch it so he had to
make a white man the lead. It's not like we have non white people in English
speaking countries. I like like how they got a Chinese director so they
could say see we're not racist writers and producers because we have an
