it might interest you too so I post it here.
So what is tea, or coffee? Why after I put those treated tea leafs in
hot water the flavor goes into water? My guess is the tea we drink is
actually a kind of loosely bonded porous material, with "tea particles"
residing the pores. When these particles meet hot water the thermal
energy becomes large enough to break the trap from the network thus
water has flavour.
