审稿的email不能做证明？

The emails are used as evidence that you have reviewed papers, that's good
enough.
The editor's verification letter is to say something that you are such an
expert that they choose you to be a reviewer, which makes the review claim
better. A couple of such letters are good, and you don't have to get such
letters for each and every journal/conference. If this editor does not write
you such a letter, you can ask other editors of the same journal.
In some even better cases, the editors can write you a full-blown support
letter, as independent reference letter.
