version is a highend very tender steak.
In US the word sirloin steak is referring to a mid-range steak. Some shops
also sell other lower grade sirloin meet as steak.
Depending on which part of sirloin was used to cut the steak, you may find
the meat from tender to very rough. If the shop is using the tender part of
sirloin for steak you usually find the name printed as "top sirloin steak"
and more expensive.
I found Japanese beef cut is similar to UK rather than US. |
