如果是cream cheese的,用hand mixer多打一阵子,也应该没多大问题。

I've got the same problem with some brands of mascarpoon, but not the other
brands.
suggest to use the brand with clear/white box and red label. tried once with
another kind with green label, it sucked.
if it's not the brand, then probably cheese went bad, or egg yolks was not
heated to be thick enough.
