Applying for Schengen visa is pretty straight forward for
people
in UK. I don't think it will be difficult in US. You should

I guess end of summer (late September) would be good time:

students residing in Europe.
As to the language problem, you'd better talk to the young
people. Don't worry about that.

Bordeaux could be a good idea. I think the best time could
be the harvest time of grapes, you can even participate in
activities of CAI3 PU2 TAO. But you'd better find a guide
or a contact before.
