I don't cook fish with vinegar...
I don't like fish with sour taste neither.
In my opinion, the best way of cooking a fish, some kind of fish at least,
is steaming... with a good soy sauce. There is a specific soy sauce just
for steaming fish, from my experience, 海天 is better than 李锦记.
But never see 海天 soy sauce in chinatown.

1.生吃配lime。
2.清蒸。
酱油分2种。根据发酵程度。
1.老抽着色,盐分小。
2.生抽蘸着吃,盐分更大。
豆豉蒸鱼的酱油,柑橘酱油,是根据口味配合的,各个品牌都有的,至于日本的那个寿
司酱油,也只不过是头抽而已。
