发帖数: 218 | 1 俺觉得海绵和戚风是国内人的定义非常模糊，在美国这边一般超市蛋糕房都写sponge cake，甚至
是一些香港饼屋卖的那种paper line cup sponge cake（纸包海绵蛋糕，不是美国的那个纸杯
蛋糕cupcake，我记得前段时间版上有个mm问过说很好吃但不能天天跑去中国城买）。如果按字面翻
译过来这个是海绵蛋糕，但实际是口感我吃起来非常柔软轻盈，应该是chiffon。我还专门去问了卖
这个蛋糕的香港烘培师，他就是用stand mixer全蛋打发的，成分是全蛋，多加一个蛋黄，粉，
vegetable oil。回来查了，这样又好象是国内的清水蛋糕，如下链接：

可是这个明显是分蛋chiffon做法。只是没有放水。
但是我吃上面的香港饼屋的那个全蛋打发的纸包海绵蛋糕（如果按国内定义和标签英文
是sponge cake海绵蛋糕，对伐）和这个国内的分蛋清水蛋糕没啥区别啊（这个分蛋清水蛋糕应该
算是chiffon，对伐）

材料的方子是网上找的:
zest from 1/2 lemon
1 cup sugar
1 cup unsalted butter
4 large eggs
2 tablespoons warm water
1/2 teaspoon real vanilla
2 teaspoons lemon juice
2 cups cake flour
2 teaspoons baking powder
1/4 teaspoon salt
1) 其中zest用了橙子皮，只用最外面一层，白色的衣尽量剥干净，和糖放在blender里
打碎。
2) 黄油融化，拌入1)中
3) 鸡蛋打碎，一点一点拌入2)，边加边打
4) 加水，香草和柠檬汁
5) 另找干净的碗蛋糕粉，泡打粉和盐过筛混合
6) lz家木有打蛋器，这个时候已经彻底打不动了
7) 意识流开始：4)中混合物倒进blender，开打 （blender就是做smoothie的最简陋的
blender）

各个地方有各个地方的叫法吧， 我觉得
不太严谨的就会叫混
我觉得（我不是专家），sponge cake是全蛋打发，口感相对戚风来说比较实和湿，比
较结实， 适合做裱花什么的
戚风是分蛋打发，蓬松，轻盈， 也可以做夹心裱花蛋糕什么的， 但可能没有前者结实
。不过网上很多烘焙的博主们喜欢用戚风做底，各人喜好问题。 |

They differ in how they generate spin.
Tacky rubber uses a sticky, hard, thick rubber + hard sponge. Using Chinese
style brush strokes swinging from side to opposite shoulder with full swing
to generate high spin. Your Hurricane 2 is good example. You need full swing
to compress that hard sponge. The tackiness generates the spin.
Grippy rubber uses a non-sticky, soft, thin rubber + soft sponge. With this

brioche在书中有3个version，rich man, middle class, poor man。不同的version的
相差之处就是在于黄油面粉比，rich man自然黄油含量最高，但是也会导致面团不容易
操作，第一次挑战么，就不要加高难度了……用了middle class version，黄油面粉比

brioche首先要制作sponge
1/4 cup bread flour; 1 tsp instant yeast; 1/4 cup warm milk
