This is absolutely understated issue.
Just look at the price tag of cigarrettes.
I remember it's about $3 a pack in 2001.
Now it's $6 and growing.
Every state when facing every bloating budget deficit will look the first
second into the chance to hike the cig tax. So, literally, smokers not only
suffer degrading health conditions but also foot the bills for governments,
state or local to pay for the excess of relentless government spending. Hell! |

据预报说下周温度会降到六十度左右，天晴干燥，比较适合做香肠，所以这两天问我有
关自制香肠的朋友特别多。
我想不如把我能想到的细节写出来在这里，大家都方便。
第一就是选肉，我坚持推荐肥三瘦七这个比例标准。
有朋友觉得用纯瘦肉更健康，但是瘦肉做出来的香肠很柴，也缺少应该有的香味。
因为肥肉在腌制晾晒的过程中会出油，一部分滴出去了，一部分渗透在瘦肉里，这样瘦
肉的口感就不会发柴。
至于健康问题，我觉得不用担心。没有人把香肠当饭吃，不过是切一根半根当
小菜。计算下来，一顿饭吃进去的肥肉的脂肪能有多少呢？
选肉要尽量避免筋膜多的部位，因为腌制和晾晒的过程中筋膜会变得更加紧密，而香肠
食用之前蒸煮的时间不长，不足以让筋膜软化，吃的时候根本咬不动。
在Houston，我个人感觉中国店里面惠康和越华的肉因为流量大，所以比较新鲜。挑选好之后，让店员帮忙用机器割成大条。回家只需要去皮切丁就可以腌制了。

这就是主料：无皮无骨猪肉，三分肥七分瘦，切成食指肚大小的条状。按照我婆婆大人
的指示，应该买腿肉和臀尖，再加些肥肉（这个肥猪肉在Fiesta肉柜里可以买到新鲜的
，就叫做猪油lard，69分一磅。）。也可以用肋条五花肉，图个方便。
