最近在想着买一个小锅,就是像小奶锅那样子,但是稍微大一点。可以用来煮点少量的
东西,炸少量的东西,做个汤什么的。
想买一个不锈钢的3 Qt 的saucepan问问有没有用过不锈钢saucepan的童鞋,Cuisinart
有不同档次的,最低的30左右,高点的有个French系列80左右。然后All clad稍微有点
贵,看到一个3.5QT好像是要停产还是怎么回事,130左右,比3QT的还便宜。
请大家说说意见吧,用过的童鞋给说说体会,谢谢!

西餐前的那种开胃汤,没见人讨论过啊。感觉花样很多,做起来还挺麻烦的。是不是一
般都是先炒一下
原料,然后倒入stock(清汤),然后simmer的。
比如这个recipe:

看电哥帖子好疑惑呀。我家做加的简单多了,就煮好的白鸡蛋敲裂或剥掉,然后放茶叶
和盐里煮,其他都不放了。然后煮一会之后,鸡蛋一半在水外面,一半在里面,边煮边
熏,经常翻翻。

3/4 lb. fresh mushrooms
1 cup of water
2 tablespoons butter
1 clove garlic, chopped (optional)
2 tablespoons flour
4 cups milk
1/2 cup cream
a few gratings of nutmeg
salt and pepper
Put the mushrooms in a saucepan with 1 tablespoon of butter, a few gratings
of nutmeg, garlic, salt, and pepper, and 1 cup of water; cook over medium
heat for 20 minutes, then process in a blender or press through a food mill.

Porkloin and brussel with chopped apple sauce
Ingredient:
6片 chopped porkloin (or pork chop)
3个Macintosh 苹果
一盒brussle
一把gold French potato (一个大Idaho土豆切块代替也可)
3根胡萝卜
黑胡椒,parsley flakes,淀粉,cinnamon,vodka,葱,生抽,糖,盐,油。
步骤:
porkloin每片一分为二,出去多余的脂肪和筋膜。葱末、parsley、盐、生抽、vodka与
肉拌匀,放在一边等着入味。然后烧水准备Brussels等sidedish。
怎么处理Brussels呢?要把外层的黄叶摘掉,冲洗掉泥沙,从根部切个X形刀法。土豆
洗净,也是同样一个切成4快。胡萝卜切滚刀块就行。
热锅冷油,到油6成热的时候撒parsley和黑胡椒,逐一放肉片,平铺在锅底。火候减到
中小火。等到肉片的侧面2/3变白就可以翻面了。翻面以后撒第二遍盐,再放一次
parsley,盖上锅盖,继续中小火煎至全熟。约4分钟关火,余热让肉的香味和汁水都留

在Nytimes上找了一个recipe,如下

月饼的影子还不知道在哪里,先弄糖浆,有个嗷嗷待哺的娃再来折腾
这种复杂的东西真不是一点累,做月饼就为了试一下俺娘给带来的月饼
模子。。。。
君之的方子,我做了一半,200g糖,25ml柠檬汁,150ml水
过程不赘述了,刚开始觉得颜色差不多了,但看起来很稀,跟蜂蜜差远
了,又追了几分钟,结果放凉发现太稠。。。然后又重新加了点水熬匀,
最后这个样子,应该还可以再弄稀一点,但没力气了,姑且接受,先试
试看效果,颜色似乎已经比君之那个深了,怕熬黑了- -
我用1.5q的小saucepan,小火苗熬了半小时,量少,时间可以再短点,以
颜色为准,糖浆热得时候很稀,不好判断浓度。

过节就是胡吃海塞。 上一个新学的菜。
SHRIMP ETOUFFEE, 应该是Louisiana 风味的,微辣海鲜,冬天里吃暖暖的。也是在
别家PARTY吃到好吃先学,然后先卖到劳工DEPT PARTY,挺受欢迎的。而且做起来简单
,如果提前把菜切好,只需要30分钟COOKING TIME。 缺点就是不能放,一放就变色。

第一步 买肉,一般用 pork spare rib 做,还有一种st louis style spare rib是前者
去除了裙边,更适合。这次backrib促销,就用backrib做了。
第二步 冲洗,去除背面的膜,沥水,后擦干
第三部 准备RUB,我常用这个,简单,效果也不错,盐:黑胡椒:paprika:白糖:红糖
=1:1:1:5:5
第四部 抹rub,抹完,肉肉非常性感,我喜欢腌过夜
第五步 起火,喜欢用 chimney starter,塞两团纸即可。
第六步 没有smoker,就用经典的weber one touch gold 22.5寸代替,左边一滩水,右
边一滩煤球。一滩水的
作用防止肉过干,铝盘还能接住滴下来的油脂。
第七步 架肉在水盘上方,1-2块肉直接放上去即可,离火6寸多。肉多的,不要直接叠
在一起,专业的用rib rack,廉价解决方案,弄成肉卷,缺点是做完了是弯的。低温长
时间熏烤,上下通风口留一条缝即可。密封不好的烤炉可以把通风口关掉。
第八步 控温,250-275F 为理想温度,如果有无线温度计,会更便捷监视温度,一边灌

推荐不锈钢锅,底面积要小,锅要深,否则很容易炸东西时候油四处溅,煮的时候也容
易扑出来。炸东西单买一个薄的不锈钢锅,煮东西可以用厚的不锈钢锅。all clad用来
炸东西有点浪费,用来煮东西不错
