刚去中国店看到beef back ribs 和 pork back bones,就买回来准备给狗刷牙, 这个
都可以吃吧? 我看上面还挺多肥肉的,也许是筋?
还买了一盒part of chicken,我看就是鸡杂, 有鸡珍、鸡心、鸡肝, 这些都可以给狗
吃吧? 我是打算切小块带去上课当treat的,现在黑皮上课的时候太丢人了,一直低头
拣地上别人掉的treat。。。。。。。。。
其他还有什么生肉可以切块当treat的? 我是用鸡胸肉做了鸡肉干,可是都不够
attractive,是不是生肉更好些? 我看中国店还有什么猪肝、猪肾、猪肚、猪大肠(
也许有些是牛的?),这些哪些可以做成treat?

烤排骨一般需用酱料腌(sauce marinate)或者干抹腌(dry rub marinate)。两种腌
法各有各的特色,干抹的排骨烤出来有些烟熏的味道。
【腌肉配料】按这个比例配料:
3 汤匙红糖
1 - 2 汤匙paprika粉
1 - 2 茶匙chili或cayenne粉
1 - 1.5 汤匙盐
1 - 1.5 汤匙黑胡椒(粗粉)
1 茶匙蒜粉
1 茶匙洋葱粉
【制作过程】
1. 将排骨洗净,晾干。可以用牙签在排骨上面戳上一遍。
2. 将调料粉均匀的抹在排骨上,静置6-8小时。(干抹腌的时间长些,酱料腌渗透
力好,不用腌那么

刚刚google了一下,你这种叫做LA Galbi。貌似是在美国的韩国人首先这么做,然后又
传回韩国的。
"Gar bi" (ribs), sold in Korean restaurants are Beef spare ribs cut into
about 3 to 4 inches tall with the meat sliced long and very thin forming a
flap. Sometimes this long thin flaps of meat wraps around the rib bone 3 to
4 times.
"LA Gar bi", are Beef short ribs. About 3 inches tall, 6 to 7 inches long

The whole Neckend is taken from the Spare Rib and Blade joined together.
This can be butchered to prduce two separate cuts, or boned and rolled

说到这个铁板牛柳,先来说说我一直以来的一个错误。很久以来,我一直认为“柳”就
是指的条条,条条状的都是柳。所以一直奇怪饭店的牛柳为神马是片片的。直到一次和
朋友聊天说起来,才恍然大悟,原来牛柳并非牛条条。。
【什么是“柳”?】
“柳”是中华饮食的专用词,用来指成形的肉块或肉片,可以看到清晰的纹路。可以叫
“柳”的一般是运动适量的地方,如猪里脊。运动太多,肌纤维就粗了,运动太少,又
很松散。“牛柳”,一般指牛里脊,是牛肉身上鲜嫩的部分。“鸡柳”一般指的是鸡胸
。“鱼柳”是个例外了,这个是名副其实的鱼条条了。。
再来侃侃这个肉,不止一个人问过我“牛肉怎么做才能像饭馆一样嫩?”其实吧,这个

我和女儿都是STEAK LOVER。今天她正好在家,问她要不要吃牛排,
她问到哪家吃,我说自己烧,她还有点儿半信半疑。其实我早就在家
操练了N次了。得出了重要结论:牛排一定要买得好。不要嫌贵,
想想在店里吃14盎司的RIB EYE一般要15-30刀不等,
超市里质量头等RIB EYE也就9刀一磅。新手一定先试RIB EYE,
因为我们中国人总是怕肉不熟,容易烧老。RIB EYE即使老一点儿
也不会感觉太硬。我跟女儿一起到ACME选了两块RIB EYE,6块99一磅。
两块总共10刀露头。再说一下怎么选肉。一定要选有白色纹路的,
就是有MARBLES,MARBLE越多越嫩,当然FAT也越多。
买回来后放在室温下1小时左右,让肉温基本达到室温,入锅前双面
抹上食用油,撒上盐和糊胶。切忌提前放盐淹肉,不然把肉里的
最宝贵的肉支淹出来了。也不要放很多中国的香料,照我看胡焦足够了,
味最正。锅那,最好是买一个带GRILL条条的锅,一般杂货店都有,
便宜的7-8刀左右。锅里擦点儿油,烧到8成热放牛排,
不要翻, 一直烧3分钟,然后翻个, 再烧3分钟, 就是所谓的MEDIUM了。

back rib = loin rib
is the first 13 rib bones and meat taken from the pig's back. Part of the
meat is from the loin so it is very meaty. If the pig is young it is also
called baby back rib.
spare rib
is taken from the belly therefore the meat is less and the bones are not
aligned as nicely. We chinese usually cut it into small pieces. It's cheaper.

然后发现他们的menu上的这个

前天去超市买东西,看见羊肉区有打折,lamb shoulder chop原价4.99/lb,打折到4.
69/lb,便宜3毛。本来没打算买,后来看到两盒贴着lamb shoulder chop的肉怎么那么
像rib chop,但是价格也是4.69/lb。我拿起来仔细看了看,怀疑是不是他们把
shoulder切成了rib chop的样子,但实在是太像rib chop了,但是当时旁边又没有找到
rib的参照物。不管怎么说,买了再说,一共就两盒,全买了。
回家烤了吃了,确实剔除一根肋骨。今天去商店再看,lamb rib chop上架了,12.99/
lb,shoulder chop还在旁边4.69/lb。啧啧!

这道烤排骨,是我的保留菜品:味道非常好吃,做法异常简单。而且我发现我做了那么
多次,今天是第一次写下它的做法。
做法我用一句话就可以写完:St. Louis Style Rib一扇,抹盐和胡椒之后在冰箱里腌
一晚,接着放入烤箱,250华氏度(120摄氏度),烤4小时即可。
注:胡椒我是现磨的,盐也是现磨的海盐。自己感觉海盐或许对口味的影响不是特别明
显,但是胡椒现磨和粉之间的差别太大了。没有研磨器的同学把胡椒粒用个捣蒜的东西
捣碎也行啊。
第一次请一个朋友吃这个排骨,她都觉得很神奇,不相信只用了盐和胡椒这两样东西就
可以有这样的风味。
我也是发现美味的食物不一定要很复杂,这个排骨真是简单级了,只要上肢健全就能做

盘,因为烤的时候会留汤。同时还可以放些胡萝卜芹菜洋葱红薯之类的蔬菜铺在下面,
这样锡纸都不用包了,在上面盖一下就行了,留住来的汤汁泡着蔬菜狠好吃,一锅菜肉
都有了。

这道烤排骨,是我的保留菜品:味道非常好吃,做法异常简单。而且我发现我做了那么
多次,今天是第一次写下它的做法。
做法我用一句话就可以写完:St. Louis Style Rib一扇,抹盐和胡椒之后在冰箱里腌
一晚,接着放入烤箱,250华氏度(120摄氏度),烤4小时即可。
注:胡椒我是现磨的,盐也是现磨的海盐。自己感觉海盐或许对口味的影响不是特别明
显,但是胡椒现磨和粉之间的差别太大了。没有研磨器的同学把胡椒粒用个捣蒜的东西
捣碎也行啊。
第一次请一个朋友吃这个排骨,她都觉得很神奇,不相信只用了盐和胡椒这两样东西就
可以有这样的风味。
我也是发现美味的食物不一定要很复杂,这个排骨真是简单级了,只要上肢健全就能做

虽然词典里牛腩就只有牛胸腩(Brisket)这一块。但按中文理解,其实还包括了扇面(
五花肉)牛腩(Flank)等。还有以下几块:
坑腩(boneless short rib,即无骨牛仔骨):牛味最濃,取自牛胸前的牛仔骨/肋排
(short rib)或旁邊牛肋條(Finger meat)部位的的肉。
爽腩 (Skirt Steak):又叫「繃紗腩」、「崩沙腩」或「蝴蝶腩」,是牛肚皮的腩位,
位于牛的横膈膜附近,爽腩貴坑腩一半,由於有塊薄軟膠質,爽軟不硬。
腩底:連著坑腩近牛皮下的一塊肉,又粗又韌,很難炆。
腩角:爽腩和坑腩中間的一塊肉,分量極少。四面都有軟膠質,非常爽脆。
挽手腩:集坑腩和爽腩的優點於一身,味濃煙韌。
牛仔腩:veal breast

作为午饭有点小贵,作为晚饭好像菜式不够多,停车产很挤。不过那个鲺目鱼汤面很赞,是整条去头去尾的鲺目鱼做的鱼汤,然后另外一碗青菜面让你自己烫。肉羹米粉好像肉羹不够浓,蒜味有点重。红烧牛肉宽面很不错,有点手工面的样子。刨冰看着也很不错。

碟枪和猎枪到底有多大区别?这个问题很多人讨论,但一直没有个确凿的答案。最近去
Caesar Guerini USA为新买的碟枪做Custom fitting, 请教了Guerini USA的chief
Gunsmith, 也同时肩并肩比较了两枝同型号的双筒,Summit Sporting 是碟枪款,
Tempio是猎枪款。总体结论是Caesar Guerini的碟枪和猎枪在机匣和枪管这两个心脏部
分没有区别,最大的差别在Recoil Pad, 扳机,Rib, Sights 和锁喉。比如碟枪的
Rib 高些,更方便射手扩大视野、捕捉目标;碟枪有center bead, 更方便瞄准; 碟
枪的扳机更可调灵活,对强调Fitting 的打碟更适用。此外碟枪的整枪更重---枪管、
Rib比猎枪重,枪托也相应加重 (其实就是里面空心的部分少掏掉一些),用以平衡。
当然碟枪多长管型号,指向更好,猎枪枪管短些,更灵活。
Guerini的chief Gunsmith总结说碟枪和猎枪的主要区别在于前者有”三猫“---“More

独立日我在家,并不是很想再去看一次焰火。不过没啥事情,也就开车出去downtown看
焰火。
去看焰火,看的不是焰火,而是熙熙攘攘的人群。
downtown人巨多,大家都在排巨长的队买ribs吃,各种口味和风格的都有,
从德州牛仔风格的到什么肯塔基口味的。我心说,不特么就是一些烧烤酱嘛?
美国吃的有那么多的讲究嘛? 还不如我们中国同事自己家的炭烧ribs。
以我们这群每天吃饱了饭没事干就琢磨咋折腾的人来说,烤点好吃的ribs赛过老美
那是分分钟的事情。
city的那个小露天表演场地还是一如既往在玩交响乐,草地上就散开各色人等听着玩。
因为排队的人太多,半个小时也没有等到ribs,就不吃了,饿着肚子走到去年的老地方
等着打焰火。
9点50开始,打了十五分钟。头几分钟在马路边,后来发现,站在路中间最好,就站到
了路中间。
算了一下,一秒钟可能至少有3发,那一分钟就是180发。15分钟就是2700发。就算一发
5块钱吧,
一万多块就打了水漂了。全美这么多地方,那可是非常大的生意。
没有带相机,手机咔嚓了两张。
