如果要每个部分都好吃，就别做翻糖的。手熟的话，可以把buttercream或者chocolate
ganache弄的很光滑平整（但是手法完全不同），然后表面可以画画等，也会很漂亮。
如果非常在意外表，比如婚礼蛋糕DIY，强烈推荐用翻糖，里面用稍微结实的蛋糕，戚风
是不可以的，除非是失败了没发起来的戚风:P
如果要展示，不论怎么放稳定剂，鲜奶油都无法在室温保持超过半小时不化。
buttercream和ganache都有办法控制甜度（不是独家发明但是我暂时为了保证义卖的筒
子能得到sth very special and not readily available elsewhere先不说了）
翻糖好看，难吃，哪怕是homemade 也是甜死人。不用尝试了，把翻糖当做蛋糕的包装纸

我看了，基本上三档次， 316 最好，但是也没有正式得规范只有
316 可以用在食物处理上。
一般来说 316 》 304 》 430
然后光滑得表面比不光滑得表面好。
关于腐蚀部分，一般还是酸性物质。
所以我想如果自己要测试得话可以用硝酸看看能不能
和不锈钢反应。记得带口罩，硝酸烟吸入有危害。
关键测试还是抗腐蚀性。
抗腐蚀性越高，被认为越安全。至于铬什么得，不锈钢几乎
都有，就是比例不同而已。

follow the guidelines. Here in US there are actually many guidelines for
cancer screening. I think medicine is more science/evidence based here than
in China.
