The apostrophe simply means the omission of one or more letters.
The omitted letters need not be vowels.
I don't think it has anything to do with phonetics.
isn't, wasn't, aren't, doesn't, don't, etc. => [verb] + not
int'l => international
nat'l => national
o'clock => of the clock
O'Grady => [son] of Grady
'til => until
t'day => today
g'day => good day
However, "gottuh" or "got to", when it means "must", is actually
a colloquialism that came from an illiterate form of "ought to".
