是故意在这装啊。英文就是比较精准，什么状态什么情况都有个专门的词来形容，比如
pan searing，pan fry,brown， braise ，saute，roast, bake。这些词让我用中文
来翻译，我都找不到特别恰当的翻译。每一个如果细细解释的话都能写不少，今天专门
来写pan searing，就是煎。
pan searing这个技术通常用在炖肉上。wait，我不是前面说煎肉吗？等我慢慢讲啊。
西餐和中餐炖肉有个很大的区别，中餐通常会飞水（飞水就是把肉在水里煮一下），撇
去血沫，而西餐基本没有这个处理方法的，他们的方法就是把肉煎一下，pan searing。
中餐飞水的时候一定要冷水下肉，然后把水烧开这才会收获大量的血沫。开水下锅的话
肯定收获惨淡，因为肉表面遇到高的水温就收缩了，把原本应该释放出来的血沫包在了
肉里。
而西餐不飞水，西餐在炖肉之前就会这样处理，pan searing。就是用平底锅把肉煎一
下。这样一来锁住肉内的水分，二来，表面焦黄的肉即使炖的烂烂的也会有一层酥脆的

感觉他们performance都非常好。我自己选的其他mutual fund，看起来好像不错，但最
后回报率也不见得高。而且2008股市动荡的时候股票为主的mutual fund要腰斩，bond
fond 基本没什么变化。

发帖数: 1600 | 14 工作不久的年轻人一般bond比例只有10-20%，总的资产数目也不高。如果有房贷，你想
"sell stock in taxable, sell bonds in tax deferred, buy stock in tax
deferred."这么买的话拿出六个月的生活费，整个资产的比例就倾斜了，如果接下来股
票市场是开始长的话，自然没问题，如果股票是继续跌的话，就是另当别论了。另外熊
市股票市场和股票市场同时跌的情况也不少。这样的操作，只能是你资产已比较多，而
且本身bond比例就很高，对你来说3-6月emergency fund相当于你的资产是一小数目。
我是留emergency fond的，但存在I bond上，因为是前几年买的，rate高, 利息现在大
概差不多4%. 不过说实话，真的需要也不是很舍得用，肯定会信用卡先撑一下，实在不
行才会用。

There were not a lot of child care accepting < 2 yrs.
This teacher is nice. She organized birthday parties and I can see that she

in the beginning.

分享美国的政治和中国是很不一样的。他竞选成功后的第一件事就是去和对手套近乎，
希望以后合作愉快。而利用团结的一边倒的投票方式去影响主要政党更是很多大的组织
（Political Action Committee)常用的技巧--犹太人正是用了这种方式对美国政坛有
