冚家铲说他自己炒菜的风格是“耐心”，他问我的风格是什么，我想了想告诉他，狂
野。这得到了他的口交称赞，他告诉我，每个厨师都要形成自己的风格，并将其融入到
炒菜过程的每一个细节里。
于是我为了形成自己的狂野风格，决定用天然气灶加热米饭（见下图），这样同时也能
大幅缩短控干水分的时间。这里需要注意两点：1. 使用小火，让米饭原远离火苗，不
然米饭会被烤糊。2. 在厨房里将家人清空，不然他们百分之一千会认为你吃饱了没事
干在烧烤米饭，他们会砍死你的。（我今天就差点被我奶奶砍死） |

所谓“黄金”炒饭，即是在下锅前，将蛋黄打入米饭中进行搅拌。因为蛋黄有极强的吸
水性能，能把米饭里的水汽完全吸收，这样米饭粒粒分明、不会粘锅，出锅后的炒饭更
是拥有黄金一般的光泽。
我分离蛋黄蛋清的手法习自冚家铲，只用单手，如下图所示。冚家铲指功惊人，他仅用
左手的三根手指就能完成此步骤，而我有五根手指，终是技逊一筹。 |

接下来就是冚家铲独步炒饭界的奥义：他告诉我，搅拌时要用手指，不能用筷子或其他
工具，因为手指刚柔并济，能让米粒和蛋液充分结合。他边说边从碗里伸出满是黏液的
手指，告诉我这时不要认为自己在搅拌米饭，想象下自己在干别的事情。。。
需要说明的是，冚家铲特别强调搅拌时不能戴上厨用手套。我问他那样会不会不卫生，
他反问我：”你屌你条女的时候，她喜不喜欢你戴套？” 我支支吾吾还来不及作答，
他自问自答：“肯定不喜欢！所以你屌饭的时候，饭也不喜欢你戴套。”
他屌饭前先将手指清洗干净，并从冰箱里掏出一瓶戈登金酒，倾倒少许在碗中，给手指
消毒，他说手指上的酒精和米饭融合在一起还可以去除蛋黄的腥味。我问他为什么要用
金酒，他说这寓意是“金盆洗手”。

消毒完毕后就可以开始屌饭了。如下图所示，为了向冚家铲致敬，我也只用了左手三根
手指。搅拌的时候要将心比饭，先柔后刚，米饭也有痛楚，它需要一个适应过程。
同时加入米饭中的还有盐和鸡精调味。为了进一步防止炒饭时粘锅，还可以加入少许橄
榄油，一起搅拌。 |

屌完饭后，可以抽一根事后烟，同时开火热锅。注意炒饭时需要“热锅凉油”，最好的
方法是：热锅将橄榄油烧热后倒掉，再加入冷的橄榄油。至于为什么这么做，其中的科
学道理我尚未研究清楚。
炒饭时先用葱白炝锅，然后将火关小，倒入米饭。其间我使用了锅勺和筷子，慢慢将粘
连成球的米饭压扁，使它们分离开来。我毕竟不是冚家铲，没有那么高超的铲技，所以
双手并用，无暇摄影，险些找我奶奶来帮我拍照。但我想到她余怒未消，可能还要砍我
，我这才腾出我忙碌的右手拍了下面这张照片。 |
