发帖数: 33714 | 10 Beef Bourguignon，就是“那道菜”。买了铸铁锅的孩子们，总要至少试一次的。
1. 2-3磅牛肉，书上举例是shoulder chuk，我用的是cross rib chuck。切成2 inch大
块。
2. 1只洋葱，1根胡萝卜（我用的小胡萝卜），1瓣大蒜，切碎。
3. 上面这些，加2杯干红（我用了书上推荐的Pinot Noir），1片bay leaf，2小勺碎
parsley，1小勺新鲜碎thyme（干的话减半），1小勺压碎的黑胡椒子，半小勺盐，1/4
杯橄榄油，混合拌匀，放冰箱。
4. 睡一觉。
5. 荷兰锅中高火，丢4盎司切粒的培根进去熬油。
6. 同时把牛肉捞出来，蔬菜另外捞出来，红酒汁保留。
7. 培根盛出来，油留在锅里。不足2大勺左右的话加菜油补足。
8. 牛肉擦干，分批各面煎上色（会炸油 >_<）
9. 牛肉放一边，蔬菜炒到稍稍上色（大概5分钟），加2大勺中粉，炒大概1分钟。
10. 加红酒汁，牛肉和培根，煮开。
11. 加2杯去皮煮开的小洋葱（我用的pearl onion）。
12. 关小火，加盖炖至少1个小时，到肉酥。

发帖数: 9385 | 15 首先要谈一下我们的defense。今天defense，尤其是Mathis非常之不受纪律，老是跑过
头。被海鹰的option play，delayed run轮番羞辱，一共被干了200多码。我扣防跑还
是弱项，这个没有好的NT估计还是没戏，希望Landry会来会好一点。不过联盟里RB，QB
都巨能跑而且QB又能仍的仅海鹰一家，别无分号。Pass defense这场还行，过两周看看
会不会被野驴打爆。
今天的offense game plan还是不错的，猛打TY Hilton这个点，海鹰的corner好像速度
一般。我有点惊讶海鹰二线没能看住hilton和wayne。这一点上海鹰还比不上海豚。跑
攻上半场一无是处，主要是OL太烂。下半场尤其是第四节，里插得深跑了两个长的，很
关键。尤其有一个break two tackles在三挡五码时。看好里插得深会越跑越好。
今天的特工队丢了个punt，block了个field goal。改变了这场比赛的动量。
我扣从2-14到11-5到现在AFC准一流球队，仅仅三年。真是天佑我口，降大LUCK到INDY
