理论上说，几乎人体所需的所有营养成分都能通过植物性食物来获得。唯一的例外是维
生素B12。它通常只在肉、蛋、奶等等食物中才含有。严格的素食者就不能通过天然食
物来获取维生素B12。
不过，现代配方食品中，有很多加了维生素B12的面包麦片之类的东西。只要不是连加
工食品也不吃的人，完全可以通过这样的“素食”来获得足够的量。
素食者容易营养失衡的另一种常见理由是植物蛋白的“品质”不如动物蛋白。其实，所
谓的蛋白质“品质”只在比较单一一种蛋白质的时候有意义。比如，如果只依靠大米或
者面粉中的蛋白质来满足人体对氨基酸的需求，那么这些蛋白质的确比肉、蛋、奶中的
蛋白质效率要差。不过，一方面，素食中的豆制品也是高品质的蛋白质；另一方面，不
同食物中的蛋白质“缺陷”各不相同，互相补强的结果也能高效满足人体需求。所以，
素食者解决蛋白质需求的问题并不困难。
不过，理论上的“可以”往往并不意味着实际生活中的“能够”。对于多数人而言，大

2 middle sized tomato, dice;
2 table spoon olive oil;
1 handful chopped parsley (or cilantro if you prefer)

但是不知道植物蛋白质的摄取除了豆制品之外，还有什么其他方式（当然这个
chickpeas也是很好的source)。因为听说豆制品雌性激素含量比较高，是不是不太适合
