不顾我烤20分钟都不见饼干变黄，多烤了一会，我是看到饼干周围有一点点焦黄就拿出
来，比较酥。所以时间根据各自烤箱稍微调整一下，时刻关注，不要过了哦。
葡萄奶酥 也类似的，
【葡萄奶酥】（参考分量：30块）
配料：低筋面粉195克，蛋黄3个，奶粉12克，黄油80克，细砂糖70克，葡萄干80克（这
个可以调整用量）
表面刷液：蛋黄半个
烘焙：355度，15分钟
制作过程：
1、黄油软化以后，加入细砂糖和奶粉，用打蛋器打发，直到体积膨松，颜色略变浅。
2、依次加入三个蛋黄，并用打蛋器搅打均匀。每次都要等蛋黄和黄油完全混合均匀再
加入下一个蛋黄。
3、搅打后的黄油应该呈浓稠、膨松的状态。
4、低筋面粉过筛以后倒入打发好的黄油中。
5、用手把面粉和黄油混合均匀。
6、倒入葡萄干，并搅拌均匀，揉成一个均匀的面团。
7、取小块面团，做cookie，刷蛋液
8、烤箱预热，烤15min左右，或者至表面金黄 |

我用breadman TR875的机子选择的dough来和面和第一次发酵。结果不知道是不是发酵
过度还是搅拌
过度了，面团没有达到完全扩展的阶段。二次发酵后反而没有第一次发酵后的大。
另外，方子里第二次发酵“放在容器中在温暖的地方进行二次发酵大约20分钟”，这个
温暖的地方温度大
概是多少？我室温是80F，是不是不够？google了别的帖子有的说放在烤箱里放一碗水
，也尝试了这个
方法。把烤箱在200F预热了几分钟然后关闭，再把面团和冷水放进去，结果表皮都有点
干枯了。不知道
是不是烤箱之前设的预热的有点高。
另外这个方子好像省略了室温发酵10-15min这部，就是松弛这步。到底这步是否必须啊？

黄鱼鳞刮干净，两面肉削下来，大点的可以再切成两片，小的就不用了。
用盐和淀粉略腌。
锅里少量油， 剩下的鱼骨鱼头鱼尾巴啥的切小了，盖锅盖煎个五分钟煎
烂了，加水，加大量大蒜粉，开锅炖15min，用单层paper towel滤清了。
做汤的同时，另一个锅子煮面。
锅里少量油，加一包碎雪里蕻咸菜略炒，加做好的鱼汤煮沸腾，调味
（一般不需要加什么了），下鱼片一沸腾就关火。
大碗盛半碗鱼汤，加上煮好的面条，盖上黄鱼，yummy.

这个面的关键是大量大蒜粉，一定要多加，盖住腥气并且提香。类似的，

brioche在书中有3个version，rich man, middle class, poor man。不同的version的
相差之处就是在于黄油面粉比，rich man自然黄油含量最高，但是也会导致面团不容易
操作，第一次挑战么，就不要加高难度了……用了middle class version，黄油面粉比
1:3
brioche首先要制作sponge
1/4 cup bread flour; 1 tsp instant yeast; 1/4 cup warm milk
在大碗混合之后，盖上保鲜膜，室温下放45分钟，直到sponge rises and then falls
when you tap the bowl.
dough:
2.5 large eggs; 1.5 cup bread flour, 1 tbsp sugar, 0.15 ounce salt, 1/2 cup
butter at room temperature; 1 egg whisked for egg wash

班上已经很多人做过了，就是从版上学的， 第一次是看到羊鸡在girl版贴的时候学会
做的。
嗯 最近比较闲， 比较有时间做吃的。
上个图专馋晚上不睡觉的人 :P
1.带皮鸡胸肉两块， 试过那种无皮 boneless 的鸡胸肉，感觉还是带皮的好。
2.开水煮大概15min-20min， 不用煮太老，煮的时候放点盐
3.捞起，冷水 或者是冰水降温
4.切块，摆盘
5.准备酱料，拿出一个碗，里面装辣椒粉，花椒，白芝麻，白糖，葱花，姜末，盐，具
体分量自己把握
6.烧热油，油的量至少要没过调料的一半， 烧热之后 倒入碗中。
7.一定要浇热油，而且是把油浇上去，而不是把调料倒入油锅，后者容易糊掉。
8.用筷子搅拌， 然后倒入生抽，醋啊 什么的， 这个步骤看个人， 我比较喜欢吃酸酸
辣辣的 比较开胃。
9. 浇到鸡肉上去， 做好了，开吃吧。

多的人夸它，对它期望值太高了吧。
说说我的使用感受啊，买了大概一个月不到，煮饭一般般，没觉得特别好吃，感觉花的
时间挺长的，虽然可能真正煮的时间才20min，但是你得再等15min才能吃，要不然米都
是夹生的。我以前的电饭锅就没这个问题，煮好后最多焖个5分钟就行。
虽然煮饭一般，但是如果你家里蒸东西比较多的话，大同还是很好用的。我以前都是另
外拿锅放炉子上蒸的，现在有了大同之后，省事多了，直接加水插电就行，蒸多长时间
就加相应的水，其它就不用操心了。蒸鸡蛋羹一流。
还有它是不锈钢的，吃个放心吧。 |

炖猪蹄虽然入味，但是感觉过分油腻，
烤应该可以去掉不少脂肪，于是今天就试验了一下
猪蹄事先用酱油花椒各种香料腌过夜，然后用茶香熏鸭的方法，375F烤了2h 15min
感觉和国内店里卖的味道一样，应该是非常好的下酒菜 :) |

抹茶奶香饼干
材料：
奶油： 200g
糖份： 180g
全蛋： 50g
抹茶粉： 15g
低筋面粉： 300g
这是给学校老师的，人很多所有量比较大，自己家里吃请酌量减少哈。
350F 12-15min
1. 奶油室温软化，糖份过筛加入拌匀，加入全蛋拌匀。抹茶粉，低粉过筛加入拌匀。
2.拌匀成团后，放进塑料袋里压平写。放入冰箱冰硬。 （这时候我开始做蛋糕了）
取出擀压半公分厚。用模具压成型。
3.烤！

。然后试了毛子的tsMuxeR，还有eac3to（用的是clownBD frontend）。可是extract出
来的audio总不对劲，foobar里面显示长度只有15min，也就是说只能放第一首曲子，然
后进度条就在尾巴那里晃来晃去尽是杂音然后就停住了。全长原本是一个多小时，
24bit/192kHz，有两声道LPCM，5.1LPCM，5.1DTS-HD三种选择。三个都这德性。有没有
大虾给指点指点我这问题出在哪儿？先谢了！ |
